It is time for cookies again! These are such perfect summer cookies, look at these super cute peach cookies, don’t they just look real? They are perfect for any hot summer day. Light and refreshing and just too cute to look at. They do require a little bit of time, but I can assure you, you won’t regret it, one bite and you will be sold.  peach cookies that look like peaches

The cookie itself is a rather simple cookie, but once the filling had the chance to moisten the cookie, this is just sooo good! The filling contains peaches, in my opinion, IF you make a cookie that looks like a peach, it should also taste like one. Oh, and since I am not a very big fan of artifical food coloring (I am not completely opposed, but I like to avoid it), I decided to color the cookies with raspberry juice. This gives the cookies an additional freshness. So some more bonus points.

If you have any problems rolling out the cookies properly, chill the dough. I did that for half an hour and then it worked like a charm. I made mine rather big, but you should end up with a cookie sandwich the size of an apricot. I also tried to brush them in some parts more than in others to get this natural peach look. The sugar coat not only helps for the cookies to really look like peaches, but also serves as a protective layer. The cookies will keep for a week if kept in the fridge. Mind you, if any are left…

Super Cute Peach Cookies

Serves: About 20-22 sandwich cookies
Cooking Time: 45min preparation +15min of baking

Ingredients

  • Cookies
  • 115 grams of melted butter
  • 550 grams of all-purpose flour
  • 1 teaspoon of baking powder
  • Zest of one orange
  • 3 eggs, size L
  • 150 grams of white sugar
  • 80 grams of milk
  • 40 grams of peach or maracuja syrup

  • Filling
  • 150 grams of peaches
  • 75grams + 25grams of milk
  • 1/2 package of vanilla pudding
  • 1 tablespoon of regular sugar
  • 85 grams of butter, at room temperature
  • 85 grams of cream cheese
  • 25 grams of regular sugar
  • 50 grams of raspberries (alternatively red and orange food coloring)
  • Additional regular sugar
  • Mint leaves

For the cookies melt the butter and chill until further use.

Put flour and baking powder in a bowl, grind orange. Set aside. Then beat eggs with sugar in a large bowl for a few minutes until fluffy and lighter in color, add the butter.

Add the flour mix, milk, and sirup in three batches. The dough will be thick and sticky. Chill in fridge for about 10minutes.

Form about 40 small balls and place on two baking sheets lined with parchment paper. Two balls combined should be the size of an apricot. The balls will rise while baking.

Heat oven to 180 degrees Celsius and bake for about 15min. The cookies will look pale and may crack, that's OK. While hot, carve out holes with either a spoon or a knife (see pictures).

For the filling boil peaches and 75 grams of milk until soft, then puree. Prepare the instant pudding and 25 grams of milk and sugar in a mug. Reheat peaches and pour in pudding mix. Boil for another minute, then cool off in the fridge.

Meanwhile beat butter, add cream cheese and sugar and mix well. Add the peach pudding by the spoonful. Put about one teaspoon of this mix into each cookie. Sandwich two cookies of the same size together.

Puree the raspberries and paint the sandwiched cookies with it. Alternatively paint with food coloring. Coat with sugar. Chill the cookies and decorate with mint leaves shortly before serving.

Notes

The cookies will taste better on the second day.
