I don’t know about you, but I feel like I need a lot of comfort food and soul food. Hence I felt like making brownies. I feel brownies taste great any time of the year. The best thing is, they are rather easy to make and don’t take too long. The below recipe is made with melted chocolate and cocoa powder. This makes them extra fudy. I usually reduce the amount of sugar in the recipe as I feel that the sugar can easily overpower the chocolate flavor. Below version contains chopped walnuts and coarse sea salt, but you can omit these two ingredients.
I feel my blog was in dire need of another brownie recipe. My first brownie recipe was published in 2017 (!), so this is eight years ago. The brownies with caramel are relatively popular, however, I wanted to publish a more regular recipe again. Reason for this being that I ate some super delicious brownies when we were on vacation in Scotland. We visited the café Cuil on the Isle of Skye and were very happy with their food (I was not paid to say this). Once I saw that the cafe published the recipe on Instagram, I knew I wanted to make my version of it. I decided to try half a recipe first and use walnuts instead of chocolate chips. I simply felt like nuts, but you are free to omit them.

These fudgy brownies get their shiny top from beating the eggs with the sugar first. They are super chewy and use melted chocolate. Melt the chocolate and butter in a small pot on low heat or in the microwave, stirring inbetween. Roughly chop walnuts, if using. Line a brownie form (20cmx20cm) with parchment paper and preheat oven to 180 degrees Celsius. Beat the sugar with the gess in a large bowl until fluffy and lighter in color. Add the melted chocolate and briefly stir. Then add flour and cocoa powder and walnuts, until mix until combined. Pour into prepared cake form, sprinkle with salt and bake for about 30 minutes. Let cool, Cut once fully chilled. Sliced brownies freeze beautifully, keep in an airtight container and thaw in fridge overnight. Brownies lassen sich in Stücke geschnitten in einer luftdichten Dose verpackt super einfrieren. Am besten über Nacht im Kühlschrank auftauen.Fudgy Brownies
