Tada, this week I am going to introduce three recipes with plum. I am starting it off with this is a super quick plum coffee cake. I decided to make it because you are such big fans of this quick apricot coffee cake. I mean, I do understand why you like it so much, we have been eating a few of those ourselves. Think a batter with a layer of plums on top repeated. This is sprinkled with brown sugar and then baked. I mean, it can’t get any better. It truely is delicious!

This quick plum coffee cake consists of two layers of batter and plums and is sprinkled with sugar before baking. In this short video you can see how I make it. Wash, cut, destone and quarter the plums. Mix with about 1-2 tablespoons of sugar, depending on how sweet they are. If desired, you can add a bit of cinnamon. Set aside. Preheat oven to 180 degrees Celsius and line a 24-26cm springform with parchment paper. Beat the soft butter with the sugar and vanilla extract until creamy and lighter in color. This takes a few minutes. Beat in eggs each for about 30 seconds. Also beat in milk. Add the flour and baking powder last and only mix until combined. Spread about half the batter into the springform, sprinkle with half the plums, then spread the remaining batter on top and sprinkle also with the remaining plums. Sprinkle about 2-3 tablespoons of brown sugar on top. Bake on the lower rack for about 45-50 minutes, an inserted toothpick should come out clean. Sprinkle with icing sugar just before serving. The cake will keep for a few days if chilled and covered airtight and will intensify in flavor.Quick Plum Coffee Cake
