Today I am introducing the second vegan recipe in January. I personally am a huge breakfast person. For that reason I am offering homemade and also vegan cinnamon toast crunch for you. Yes, they do contain less sugar than the original (I decided to go with maple syrup for the dough) and they are vegan as I opted for coconut oil instead of butter. When I took pictures of this cinnamon toast crunch, I was reminiscing my childhood. I believe everybody has a favorite cereal from old times. I was all into the ones with nougat or nutella (not so sure there are such varieties in the U.S.) and I also loved anything with cinnamon like cinnamon toast crunch. I remember eating them without any milk, simply snacking whenever I felt hungry. If you keep them in an airtight container, they will stay crunchy for a long time.

Are you also such a big fan of picnics? I just love the idea of sitting on a blanket, enjoying a few treats I prepared beforehand and breathing some fresh air in nature. A picnic to me is the best way to relax. Below you will find two recipes perfect for a picnic. One is a berry salad infused with lavender honey, the other is homemade pesto, which I used on a sandwich as a spread, but which may be used as a dip or with some cooked pasta. Today you will get Gougère from Switzerland! Gougères are cheese balls made from choux pastry. They are super light and airy. If you like eclairs and profiteroles, these are for you, a savory snack made from exactly the same  dough, choux pastry is first boiled before eggs are added. If you are interested in sweet choux pastry, how about profiteroles with raspberry filling, black forest eclairs, eclairs with coffee cream or peanut butter filling. Finally another bread recipe on my blog! If you have been following for a while, you may know that our entire bread is baked by my husband. He has become quite an expert and for that reason I rarely ever post recipes even though we do eat our fair share, simply because my policy is that it is me who needs to have tried the recipe so that I can answer any questions you may have and be sure that it was successful. Healthy Ginger Muffins with no Refined Sugar

It has been four years since I put these ginger muffins on the blog the first time. Partially they are made with whole wheat flour, the traditional butter is replaced with coconut fat and we will not use any refined sugar, but instead sweeten them with molasses. Since they contain feshly grinded ginger, they are super moist and delicious. Of course you can argue if this really is “healthy”, but at least they are healthier than your average muffin. At least I didn’t feel guilty eating them happily with some joghurt and more molasses for breakfast.

Overnight Sourdough Pancakes with Blueberry Sauce

I have said this before, but I don’t mind repeating it yet again, I am a huge fan of breakfast that can be prepared the night before. These overnight sourdough pancakes definitely fit the bill. I decided to serve them with a delicious blueberry sauce. If you are anything like me, it hurts each time you have to discard some of your sourdough starter. I personally find it so delightful to actually use these discards and make some deliciousness out of it. For this recipe we will need 200 grams of sourdough starter, so nothing is going to be wasted. The Fluffiest Braided Bread

This fluffy and soft braided bread is traditionally served for breakfast on Easter in Germany. I made it the first time last year in 2020 when Europe was in heavy lockdown due to COVID19 and it was hard to get flour and yeast. I was grateful I always have active-dry yeast on hand, otherwise I wouldn’t have been able to make this delicious bread. I have tried many different types of this bread, but this one is by far the fluffiest and softest and for that reason I am confident to present it here.

Today I am going to introduce the best Belgian waffles, thick and yummy! These are overnight waffles, the batter is prepared the night before and you basically need to heat your waffle iron the next morning to make this deliciousness. Perfect for any brunch plans, for a weekend breakfast or for anything fancy you wish to make for beloved family and/or friends. I love the crisp outside (you will get lots of tips for that below) of these waffles, yet their interior is nice and soft. Whisk together the ingredients the night before and let the yeast make its magic overnight. So simple, yet so yummy.

Alex’s Bread with different Flours and Sourdough

It is finally Word Bread Day again, yay! This one is extra special to me. The worldwide pandemic is horrible, but one good thing that came from it is the fact that more people are into bread-making again. Suddenly it is en vogue to talk about sourdough and the like. Once you have made your first sourdough and made your first bread from scratch, you will understand. It is so amazing when you finally can eat the very first slice after so much labor, it is hard to explain.

Alex's bread for World Bread Day

In 2019 I celebrated World Bread day with this Artisan bread, in 2018 the bread was made with semolina and this year, well, this year we have Alex’s bread! My hubby Alex has been baking our bread for several years now. When he started, he barely knew what yeast was and had a hard time, but now he has become a master. He is the master of bread baking. When I told him that World Bread Day was approaching, he suggested making his own version of a bread, because, you know 2020 was crazy, so why not invent something? He graciously allowed me to document the process and write down the recipe for his bread.
