Pecan pie adapted for readers in Germany! If you are looking for a recipe which is not sickenly sweet, but actually makes you taste the wonderful pecans, this recipe is for you! Needless to say that this recipe does not require any corn syrup and is made with molasses instead. If you have difficulty getting hold of pecans, you may as well use walnuts instead.
For the beginning of the Oktoberfest I decided to introduce gingerbread hearts, they are a staple during this time, decorated with royal icing, often in blue and white for the Bavarian colors and showing the edelweiss flower common in the mountains. These gingerbread hearts, however, don’t necessarily need to be served for the Oktoberfest only, you can also give them as a gift for a special occasion such as a wedding, baptism, or as another sweet giveaway. Essentially, I went for my beloved recipe for gingerbread, which has been on my blog for a while. You can very easily make a vegan version of this recipe as it does not contain eggs. I asked several experts who have eaten hearts from the Oktoberfest and they did tell me that yes, you usually make it with the traditional gingerbread spices. You don’t necessarily have to, but it is pretty common. So folks, if you are in for some decorating, for having fun, this recipe is for you!
I do already have a few apple pie recipes on my blog, but none contains alcohol yet. I find it pretty difficult baking with alcohol. You have to add so much and most of it evaporates during the baking process. But today I thought I would give this famous dessert a little twist and give it a try. So let me introduce you to this apple pie with a hint of whisky!
OK, this simple one-layer cake may not look that pretty, but I am telling you, it is so delicious! We have a one-layer chocolate base, which is then topped with whipping cream infused with cinnamon and plums that are simmered for a while. You need to serve the cake immediately, otherwise you may see something similar as I did, mainly that the plums move towards the plate. But be it as it may, it may not look the part, but it is sooo delicious!
Warning, you will only be able to eat a small piece of this decadent toffee cake with dates. I find the combination of sweet dates with sticky toffee sauce so endearing. This is rich, this is soulfood. The cake layers are sweetened with dates, the buttercream contains toffee sauce and of course the whole cake needs to be soaked in toffee sauce. I decided to sprinkle this cake with a little bit of coarse salt to cut the sweetness a bit. This is a prefect cake for a gloomy November day or any day that needs some comfort food.
Pastafrola or pasta frola is a tart from Uruguay, which is similar to Linzer Torte. It is based on a pie crust, which is then filled with quince paste. A simple tart on the one hand, yet also unusual as it uses quinces for the filling. I often wonder why there are so few recipes out there with quince? At least here in Germany it is really hard to find. Quince is a very common fruit in Uruguay. Dulce de membrillo or quince paste is basically dense jam, which comes in squares and can be cut in pieces. However, in Germany you may find quince jam, but even that is super hard to find. So for that reason you will either need to buy quince paste on Amazon or you will need to make quince paste yourself. Funnily enough, quinces are sold in grocery stores in Germany, so you may have a chance.
Guys, I have not introduced a classic apple pie yet. What a shame! As October is the months of apples and apple picking, I decided to introduce it now. Apple pie is something almost everybody loves, even though pie crust can be a little intimidating. If you would like to learn how to deal with pie crust, I recommed this blog post. Does this pumpkin mousse caramel cake count as cream cheese cake? I don’t believe so as it definitely tastes more like mousse than anything and you may even serve it as an icebox cake. But be it as it may, I find this cake delicious, if you like pumpkin and caramel, this cake is for you. We will use a Biscoff cookie crust and these already give a nice crunchy and caramel flavor. The filling contains a lot of pumkin and then we are going to top if all off with additional caramel.
Guys, it is a shame I haven’t posted any cookie recipe in a while! This needs to be rectified immediately. Especially since I am a huge cookie monster. Below pumpkin chocolate chip cookies are my favorite cookie recipe when in comes to a vegan version. I am telling you, they are super easy to prepare and will be gobbled up in a jiffy. I at least have made them many times over. Maybe you are also interested in trying them?
May I present plum tart with twin dough! I have to say, I love this season, it is my favorite time of the year. Indian summer, I just love a good late summer day, with colder nights, but still nice clear skies and this wonderful golden light. One plus of this wonderful time is that plums are in season. My husband loves plums, if it were for him to decide, he would eat them all year round. There is a reason I have quite a few plum recipes on the blog. For example Kaiserschmarrn or broken-up pancakes, plum tart with cinnamon streusel, plum dumplings or Bavarian plum cake. Now this is one more to add.
