I often take cake to work. My colleagues are some of my regular test eaters. And since I bring cake to work often, I usually can tell if a recipe stands out. That was definitely the case with this apple almond cake. Suddenly I found post-its saying “Thank you to our baking queen” or “Thanks for making my Thursday morning much sweeter.” My conclusion? This apple almond cake is a keeper, it is a keeper because no other cake has received as many post-it notes. It definitely needs to be posted on the blog. If you want apples in your coffee cake, this is the cake to choose. You have some apple in the cake dough, a lot of apple compote on the top with some nicely browned almonds plus one full apple as pretty decoration on the top. I mean, you got APPLE cake for sure with this one.

Some of the pictures you see here were actually taken before work in the beautiful park I pass every day. I feel so lucky that I can ride to work by bike. On top, not all of the road is a loud street, but I pass the English garden, the green lung of Munich. I was crazy enough to take the cake on my bike (I have become very good at transporting cakes, cupcakes, etc. on my bike to work) and decided to take my camera with me. So here I was on a brisk fall morning snapping pictures of this beautiful cake before it was devoured by my colleagues. Below picture shows the surroundings.

The dog was about to dig directly into the cake as I had left it between some leaves on the ground, I was lucky I managed to protect the cake on time. Cute dog, I think he knew this was such a good apple coffee cake. Hopefully I encouraged you to bake one yourself. Cake batter with apple slices, apple compote, caramelized almonds and some more apple for good measure, that’s what this beauty consists of.

Apple Almond Cake

Apple almond cake means cake batter with apple slices, apple compote, caramelized almonds and some more apple for good measure on top.

Ingredients

  • Apple Compote
  • 650 grams of tart apples after peeling and slicing (e.g. Boskop, Elstar)
  • 50 grams of butter
  • 75 grams of white sugar
  • 1 teaspoon of vanilla extract, see here how to make your own

  • Apple Batter
  • 4 eggs
  • 160 grams of white sugar
  • 1 teaspoon of vanilla extract, see here how to make your own
  • 200 grams of heavy cream
  • 220 grams of all-purpose flour
  • 2 teaspoons of baking powder
  • A pinch of salt
  • 1 apple

  • Almond Topping
  • 140 grams of butter
  • 70 grams of white sugar
  • 1 teaspoon of vanilla extract, see here how to make your own
  • 3 tablespoons of milk
  • 150 grams of flaked almonds
  • 1 apple

For the apple compote peel and slice the apples. Meanwhile heat sugar and butter in a large saucepan at medium heat until it becomes golden. Add the apples. It is normal that the caramel will suddenly break into parts, keep heat on medium-low and let the apple simmer for a few minutes while stirring. The caramel should become liquid again and the apples soften. Add vanilla extract and set aside.

For the batter preheat your oven to 180 degrees Celsius. Mix the eggs with the sugar for about five minutes until thick and light in color. Beat in the heavy cream briefly. Add flour, baking powder, and salt and only beat until combined. Pour batter into a 24-26cm springform lined with parchment paper. Peel the apple and chop into cubes, which you then press into the batter. Bake cake for 35-40min. It is possible to stop the recipe here and continue the next day if cake cools and is chilled overnight.

For the almond topping melt the butter in a large saucepan, then add all remaining ingredients except for the apple and bring to boil briefly. Set aside. Pour this mix onto the baked cake. Cut the last apple thinnly and arrange in a wheel on top of the almond topping. Bake cake like this for an additional 35min or until almonds are golden. Cake will taste great warm or cold.
