Valentine Cherry Hand Pie

Valentine is around the corner and this is a super simple recipe you can make, it has few ingredients you mostly likely have at home. They contain all-purpose flour, sugar, butter, almonds, one egg, vanilla extract, and cherry jam. Happen to have those at home? If so, let’s have a look at this hand pie, which I specifically made for Valentine! These hand pies are perfect to take along as they fit into any plastic box (no hassle dragging a three-tier cake along), they can be prepared in advance, and they are so small that you can share with more than only your Valentine. On top, they simply are cute to look at and they can be frozen easily. These cherry hand pies are the best!

I decided to go for a pie pastry with almonds. The almonds make these hand pies extra crunchy. I feel this is the perfect contrast to the sweet cherry jam. Of course you can also leave the almonds if you just want to go for the plain version, but I am begging you, you have to try this version at least once.

Pie pops or hand pies, you make them as you want them! Oh, and you can replace the cherry jam with any other red jam, of course.

And best of all, you can make the pie pastry a few days in advance. You can also freeze them beautifully, already fully prepared. So no need to stress out for Valentine’s Day! So let’s have a look at the recipe:

Valentine's Cherry Hand Pies

Serves: 18-20 hand pies
Cooking Time: 45min preparation +20min of baking

Ingredients

  • Pie Pastry
  • 300 grams of all-purpose flour
  • 150 grams of regular sugar
  • 100 grams of ground almonds
  • 200 grams of cold butter, cut into pieces
  • 1 egg, size L
  • 2 teaspoons of vanilla extract, see here how to make your own

  • Cherry Filling
  • 150 grams cherry jam or preservative, any other red jam works as well

Instructions

For the pie pastry make crumbs at least the size of peas with all ingredients except for the egg and vanilla extract. This is best done with the kneading attachment of a mixer, if you do it with your hands, be sure to do it quickly.

Add the egg and vanilla extract and knead with your hands until you can form into a ball. Chill for at least half an hour in the fridge with plastic wrap.

Take out dough, divide into two parts, return one part to the fridge. Line two baking sheets with parchment paper and preheat oven to 190 degrees Celsius.

Roll out dough and cut out circles of about 8cm in diameter, I use a glass for this. Cut into half of the circles a heart. Fill the first half of circles with 1-2 teaspoons of cherry jam. Place on each a circle with the heart shape. Seal edges with a fork. If you wish to make cake pops, be sure to stick the stick deep into the hand pie. Also seal them extra careful. I usually bake the hand pies already with the stick.

Bake for 18-20 minutes and repeat with the second batch.

Notes

The pastry dough can be prepared three days in advance. Hand pies freeze beautifully.
