Have you ever eaten pumpkin waffles? I hadn’t, I know, shame on me. But this year I somehow got into the pumpkin haze. So I cecked out Pinterest and found a lot of different recipes. Finally I encountered the recipe below and bam, I was hooked. These pumpkin waffles are super fluffy, I love that they are crispy on the outside, soft on the inside and tall and thick. I think they can be served either for breakfast, but also as a nice dessert.
I made cute pumpkin cookies in pumpkin shape! Reason was for Pinterest apparently telling me to make pumpkin cookies, all I saw was something pumpkin. So I obeyed and thought, why not make some pumpkin sugar cookies? For this I turned to my favorite sugar cookie recipe. Because, you know, IF you make a cookie shaped like a pumpkin, it sure should contain pumpkin. At least in my opinion. And then I also wanted some fall spices, like cinnamon, cloves, ginger, and nutmeg. So I threw in this spice mix. It actually is very similar to the one of my beloved pumpkin spice latte. And in the end I got these cute little cookies.
Have I mentioned before that I love fall? It is my favorite season. I just love everything, the cozy scent of cinnamon, warm and snuggly blankets, hot chocolate, the golden sunlight, there is very little I don’t like about fall. I even enjoy the rain, even if I have to wear a rain jacket and rain pants when I cycle to work and feel the raindrops hitting my face. It’s like an old friend I am happy to say hi to. For that reason it is time that I give you a list of my favorite fall recipes. Oh, there is so much you can bake with, apples, plums, cinnamon, pumpkin, I just love fall ingredients! This is vegan yeast dough that is pretty easy to prepare and is definitely going to be a show-stopper. I brought these pumpkin rolls to a party once and I was asked to pass on the recipe several times.

I made a mistake the first time I made these. I gave these cute little owls names. And then it was so hard to actually bite into one of these big eyes… Really bad idea. You will need Oreos and M&Ms, it’s really simple to make.

Can I confess something? I have never been a big fan of pumpkin pie. I know, kill me know. But I just don’t like the flavor that much. I have tried my share of pumpkin pies, but still. That’s why I have ignored pumpkin mainly in baking.
But then I met my hubby and hubby is a big fan of pumpkin pie. So I started looking for good recipes. This recipe is currently his favorite. If you like pumpkin pie, try it, it is great. But as stated, I didn’t get excited. Because I don’t like such a dominant pumpkin flavor.
This layer cake is perfect for fall/winter as it is a hybrid. Hybrid because it contains pumpkin, which for me is associated with fall, but also winter as it has pears and walnuts. You think a pumpkin layer cake? Really? But once I tried a latte macciato with pumpkin, I thought, why not a layer cake? Below pumpkin layer cake with pear buttercream and caramelized walnuts (I just love this title, it just makes me proud), was invented by me. Don’t worry, if you are not a big fan of pumpkin, its flavor is very subtle. Trust me. I have to say, I was a bit surprised when I started looking for recipes. Pumpkin and caramel is common as is pumpkin and chococlate. But pumpkin and pear is rare. At least in the baking department. But I just love that combination. Pumpkin and pear, I feel it is perfect. Maybe this cake is perfect for your Thanksgiving party? Or to start holiday baking season? It definitely is a show-off!

It’s official today, it is fall in Hamburg, Germany! Did you know that fall is my favorite season? I feel there is so much to like, the leaves are turning color, I can finally get into my cozy cardigans and pullovers, sip some hot chocolate and enjoy being snuggled under a blanket with a good book to read. And the light! So soft, so golden, so nostalgic! Also, fall seems to have all my favorite ingredients: nuts of any kind, apples, pears, plums, and pumpkin. I usually prefer savory dishes with pumpkin, but since my hubby loves pumpkin pie (I don’t really), I thought, OK, why not try a pumpkin cupcake. Don’t ask me why I thought that would be the perfect combination. But it just popped into my head and I faithfully headed over to my favorite baking blog Sally’s baking addiction. Sally produces one perfect recipe after the next, so I was not surprised that her pumpkin cupcake/muffin recipe was just as perfect as all the previous recipes I had tried from her site.
