Butter Cake with Apples and Caramel Sauce

Butter Cake! Today you will get a butter cake with lots of apples, almonds, and caramel sauce. I warn you, this is a yeast dough that requires you to start at least the night before and that needs a few hours of rising before you can actually bake it. But if you bear with me and go through all the hassle, I can promise you, this is an ultra fluffy yeast dough with a nice crunch at the same time. Think of baked apples and caramel sauce as the addition to this delicious cake and you will love this one.

I honestly never got why people like that, I like to add some fruity component to it, for it to really reach new levels. But I wanted to let you know that butter cake in its true German sense really means just sprinkling the dough with butter and sugar prior to baking. If you wanted to try that, by all means, feel free to do so.

However, if you want to make my version, you will receive a really nice mix of yeast dough, baked apples, almonds for extra crunch and our beloved caramel sauce. If you are too impatient or find this recipe too complicated, you can also try easier yeast dough versions. Apricot sheet cake with yeast dough or German plum cake called Zwetschgendatschi may be better suited then. But if you are open to it, wow, this is really a very special yeast dough!

Butter Cake with Apples and Caramel Sauce

Serves: One sheet cake of 35x24cm
Prep Time: 1hr preparation + overnight rising and 1 1/2 hours of rising the following day Cooking Time: 30min

This butter cake with apples and caramel sauce requires some work and has several rising times. But I assure you, it is worth the effort.

Ingredients

  • Caramel
  • 200 grams of regular sugar
  • 90 grams of butter at room temperature
  • 120 milliliters of heavy cream
  • Optional: 1 teaspoon of sea salt

  • Pre-Dough
  • 125 grams of all-purpose flour
  • 80 grams of water
  • 2 grams of salt
  • 1 gram of fresh yeast

  • Second Pre-Dough
  • 75 grams of milk
  • 15 grams of all-purpose flour

  • Main Dough
  • 260 grams of all-purpose flour
  • 50 grams of milk
  • 5 grams of fresh yeast
  • 1 egg
  • 20 grams of regular sugar
  • 50 grams of butter

  • About one kilo of apples
  • 100 grams of almond silvers
  • Additional butter

Instructions

For the caramel sauce put the sugar in a deep frying pan with no fat on medium heat. First the sugar will form lumps, then it will slowly change color and become liquid. It should get the color of amber. Try not to stir it, but swirl the frying pan for it to melt evenly. Then add the butter all at once and stir until it is melted. Add the heavy cream all at once, be careful, as the caramel will get bubbly due to temperature differences. Stir for another minute. Set aside.

For the first pre-dough mix all ingredients in a container that can be closed, leave at room temperature for an hour and then chill overnight in the fridge.

For the second pre-dough whisk together the flour and milk in a small pot and bring to boil while stirring. Immediately reduce to medium low once it starts to thicken and stir all the time. Cook for about a minute, it should get very thick. Let cool to room temperature and then also chill in the fridge overnight.

On the next day for the main dough place the first and second pre-dough in a large kneading bowl and add all other ingredients except for the sugar and butter. Briefly knead until combined and let sit for half an hour at room temperature covered with a damp towel. Then knead for about ten minutes. Add half the sugar and knead for a few minutes, then the second half and knead again for a few minutes. Lastly add all the butter and knead until combined, it will take a few minutes. Cover again and let rise for about an hour.

Oil a baking sheet with about 35x24cm and either roll out the dough or, what I like to do, simply stretch the dough with your hands until it fits the baking sheet. Wash apples and cut in half, taking out the center. Then slice halves or quarterts into thin slices and decorate entire cake with it. Spread the almonds on top and if desired, add small chunks of butter. If you are not using the caramel sauce, I recommend sprinkling generously with sugar. Heat oven to 190 degrees and bake cake for about 30min or until golden brown and almonds got golden. Serve with caramel sauce.

    Hallo Jenny,
    Deine Variante mit den vielen Äpfeln und der Karamellsoße sehen super lecker aus. Der Kuchen war bestimmt sehr saftig.
    Karamellsoße habe ich bisher noch nie selbst gemacht, aber es klingt gar nicht so kompliziert, wie ich immer dachte.
