Guys, I looooove fall. I just love this golden light, the rustling of leaves, I just love every aspect of it, including rainy days as these are so perfect for reading a nice book with a thick and snuggly blanket. I always get excited during fall and I snap pictures of everything, I wish fall was three quarters of the year. And for this reason I decided to make a simple and easy apple slab pie for picnics.
I am almost to ashamed to admit that I don’t have that many animal recipes on this blog even though I am a huge animal lover. For that reason today these cute little hedgehogs from pie crust need to be published. I am a huge fan of anything related to fall. I love to watch hedgehogs looking for heaps of leaves, it is so cute to see squirrels happily looking for nuts or birds being content that there still is enough food.
Today I am presenting the German answer to American pies: strudel! Strudel is a very elastic dough, which is rolled up to a log and contains lots and lots of fruit filling. When I served this plum strudel with cinnamon streusel to my guests, I could barely manage to see any of it as it was gone so quickly. Just as pies, this strudel is a “healthier” version of a cake as the ratio of unsweetend dough to lots of fruit filling simply is genious. Yes, you read right, today I am serving maple syrup bacon cupcakes! This is definitely an unusual flavor combination. The first time caramelized bacon got my attention was when I saw the Irish blogger using bacon for scones. And once I was paying more attention to bacon in sweet goods, I suddenly saw it on Pinterest, used in and for cupcakes. If you think using bacon in sweet cupcakes is crazy, maybe I can convince you if I say that the bacon is caramelized. I have to say, I do love this crazy sweet and salty flavor combination.
Today I am introducing yeast dumplings with plum filling. These yeast dumplings have a lot of names in German, Buchteln, Ofennudeln, Rohrnudeln, Nudeln aus dem Rohr, Wuchteln, the thing you need to know is that this is a slightly sweet yeast dough with a fruit filling. It is served as a dessert, for breakfast and sometimes even as the main course, even though I have never been a fan of sweet main courses. Usually the shape is round meaning that the yeast dough covers the fruit filling from all sides. The balls are then placed in either a round or rectangle casserole. I have to admit, I love fall, especially if you check the ground of a dark forest, you will find mushrooms, just like the ones I am presenting today. No, I am kidding, you won’t find these mushrooms in the forest, they are actually made from meringue. However, I do find that they do look very much like their original, don’t you think? I am sure these mushrooms are going to be a show-stopper. And the best thing is, they are basically made from two ingredients. You beat egg whites with sugar, which you then pipe into mushroom caps and stems, you glue it all together with chocolate, and then dust them off with cocoa powder, voilá! Continue Reading…
Have you ever eaten pumpkin waffles? I hadn’t, I know, shame on me. But this year I somehow got into the pumpkin haze. So I cecked out Pinterest and found a lot of different recipes. Finally I encountered the recipe below and bam, I was hooked. These pumpkin waffles are super fluffy, I love that they are crispy on the outside, soft on the inside and tall and thick. I think they can be served either for breakfast, but also as a nice dessert.
I made cute pumpkin cookies in pumpkin shape! Reason was for Pinterest apparently telling me to make pumpkin cookies, all I saw was something pumpkin. So I obeyed and thought, why not make some pumpkin sugar cookies? For this I turned to my favorite sugar cookie recipe. Because, you know, IF you make a cookie shaped like a pumpkin, it sure should contain pumpkin. At least in my opinion. And then I also wanted some fall spices, like cinnamon, cloves, ginger, and nutmeg. So I threw in this spice mix. It actually is very similar to the one of my beloved pumpkin spice latte. And in the end I got these cute little cookies.
Guys, I don’t know if I will ever be able to eat regular tiramisu, seriously tiramisu sponge roll is the best! I have to admit, I have not been a big fan of ladyfingers. At least the store-bought ones. They are so dry! For tiramisu to taste great, you have to wait for the ladyfingers to moisten properly. And I am too lazy to actually make the ladyfingers myself.
But then I finally knew it. You need to know that I am a big fan of sponge rolls. For that reason you will find a share of sponge rolls on my blog. Try this pumpkin roll with apple cream, this roll with blueberries or this strawberry roll. Sponge cake is so light and fluffy, I really love its texture. And one day while I was checking out Pinterest, it suddenly hit me. Of course this is the solution! Why not make tiramisu in a roll instead? Why not omit the dry ladyfingers and instead replace them with my favorite sponge cake? Yes, I had to try this out immediately.
Today I am introducing plum cinnamon cupcakes with maple cream frosting. Just because. The main reason is because I love the mix of plums with cinnamon, there is nothing better than this combo in fall in my opinion.
The second reason is because you loved my simple plum tart with cinnamon streusel so much. No other recipe was clicked more than often in September. Even looking at all blog entries from 2018, it already ranks as No.5. The pictures below show the tart how I made it for my relatives during our holiday in Spain. I barely managed to take pictures, that’s how quickly it disappeared. I just love the fact that it is so versatile, I made it in a springform pan as there was no other option. Works just as well.
