Guys, I looooove fall. I just love this golden light, the rustling of leaves, I just love every aspect of it, including rainy days as these are so perfect for reading a nice book with a thick and snuggly blanket. I always get excited during fall and I snap pictures of everything, I wish fall was three quarters of the year. And for this reason I decided to make a simple and easy apple slab pie for picnics.
Yes, this is a healthier version of a slab pie as you decide how much you want to sweeten it. You may opt for maple syrup or the like if you wish, but you can also just go for the sweetness of the apples. The pie crust is any easy one and not really regular pie dough as it only contains three ingredients. That’s what makes this pie so simple and straightforward, you will barely have a chance to screw it up, make the dough, chill it, fill it with slices apples and a dash of cinnamon, place the second pie crust on top and then it is ready to bake.
Yes, it still is a cake and yes, you may believe eating wheat isn’t the best. I won’t argue with you. What I will say though is that this sheet cake is definitely healthier than many you may find. I also like the fact that you can easily cut it in squares and take it with you for a picnic. Regardless if you are meeting with family, friends, or colleagues, this will be perfect for a potluck or another gathering. The best is that you can prepare the dough a few days in advance, just need to bake it and can even do that earlier on and take the cake with you chilled. If this doesn’t convince you, I don’t know what would.
Apples are so easy to deal with and I love that this sheet cake contains a lot of apple filling. I was fortunate enough to live in the north of Germany close to many apple orchards, but even now in the south apples are sold everywhere. I usually recommend using a variety of apples, go either for one tart and sweet one or if you are not using any additional sweetener just sweeter ones.

This simple and easy apple slab pie for picnics consists of an easy three-ingredient crust, a lot of apple filling, and if you desire, does not contain any sweetener. For the pie crust rub the flour and butter into crumbs, add the farmer's cheese or sour cream and mix until you have a rather sticky dough. Cover and chill at least half an hour. It will be easier to handle if chilled overnight. For the filling peel the apples and cut in thin slices. Then mix with the spices, flour, and if you use sweetener. Set aside. Preheat oven to 180 degrees Celsius and line a baking sheet with parchment paper. Cut dough in half and roll out one half on a lightly floured surface into a 40x30cm rectangle. Place this rectangle on the baking sheet and spread the apples on top. Roll out the second half and place on top of the apples. Tuck them in so no liquids can come out. Prick with a fork, brush with egg wash, sprinkle with sugar (optional) and bake for about 40min or until crust is golden. This slab pie tastes great warm, however, it is easier to cut into pieces once chilled. This sheet cake keeps well for a few days if chilled in the fridge.
