I am almost to ashamed to admit that I don’t have that many animal recipes on this blog even though I am a huge animal lover. For that reason today these cute little hedgehogs from pie crust need to be published. I am a huge fan of anything related to fall. I love to watch hedgehogs looking for heaps of leaves, it is so cute to see squirrels happily looking for nuts or birds being content that there still is enough food.
I probably am a nostalgic person and that’s the reason why I love fall so much. You know, all these warm colors, the special golden light, the sun, it’s a nice reward, a nice way of bidding farewell before the worst of all the seasons says hello. For that reason we have to celebrate fall as much as we can. I believe these cute little hedgehogs are perfect for that. They are so simple and elegant, you may wish to make them with children with my perfect pie crust.If you want to make these cuties with children, I recommend preparing the dough until you are ready to shape the hedgehoges, just for the children not to have to wait at least half an hour. But other than that annoying chilling part, which is needed for the gluten to develop and the butter to get cold again, this is a pretty straight-forward recipe. I am certain you are going to enjoy ist, either making it alone or with the company of children.
So what are the steps here? First you have to make the dough, which is really easy and can be done in under 10 minutes. After that you have to chill it, form the hedgehogs, bake them and then it is time to decorate! I used ground nuts, they are very common in Germany, you can find ground hazelnuts, almonds, etc. However, you may also use something entirely different or you may grind the nuts yourself in a food-processor. I hope you will have some fun when you make these cute little hedgehogs!
These cute little hedgehogs are made from pie crust and can be easily prepared and decorated with children. For the dough put flour, sugar and cold butter in a large bowl and work into crumbs. Beat the egg with a fork in a small bowl and only add about half of it to the dough. Try to work the dough into a ball, if it still is too curmbly, add a little bit more egg. Work quickly into a ball and wrap. Chill for at least half an hour or overnight. Preheat oven to 180 degrees Celsius and line one baking sheet with parchment paper. Roll the dough into balls the size of a walnut and form each into a hedgehog (see pictures). Bake about 10-13 minutes. Let cool completely. Meanwhile heat the chocolate on low on the stovetop or in 30 seconds increments in the microwave. Spread on one half of the cookies and sprinkle either with ground nuts or small chocolate shavings to resemble the spines. Make small eyes and a nose (a toothpick dipped in the chocolate may help).
