Some of my favorite caramel recipes is this pumpkin cupcake with caramel filling or this delicious cheesecake with apple and caramel, because apples with caramel is simply the best combo.

Saftige Apfel-Cupcakes mit KaramellsahneThe cupcakes don’t require a lot of time and all you need to do is whip the cream for the frosting. The only downside of this recipe is making the caramel. But if you do love caramel as much as I do, I truly think it is worth the effort and you will make caramel in large batches in advance. Which is also why I feel this recipe is prepared really quickly. • Caramel
  • 200 grams of regular sugar
  • 90 grams of butter at room temperature
  • 120 milliliters of heavy cream
  • Optional: 1 teaspoon of sea salt

  • Cupcakes
  • 115 grams of butter
  • 1 large apple or two smaller ones
  • 30 grams of regular sugar
  • 100 grams of brown sugar
  • 2 eggs, size L
  • 80 grams of milk
  • 1 teaspoon of vanilla extract, see here how to make your own
  • 190 grams of all-purpose flour
  • 1/2 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • A pinch of salt
  • 1 teaspoon of ground cinnamon

  • Caramel Whipped Cream
  • 400 grams of heavy cream
  • 90 grams of caramel from above plus additional caramel for decorating

For the caramel sauce put the sugar in a deep frying pan with no fat on medium heat and stir. First the sugar will form lumps, then it will slowly change color and become liquid. It should get the color of amber. Then add the butter all at once and stir until the butter is melted. Add the heavy cream all at once, be careful, as the caramel will get bubbly due to temperature differences. Stir for another minute. Add salt and fill in a sterilized jar with a lid. Set aside.

For the cupcakes preheat oven to 180 degrees Celsius and line 12 muffin tins with muffin lines.

Melt the butter, peel the apple and grate. Combine the butter with the sugars in a large bowl, add milk and vanilla extract. Add all remaining ingredients and only mix until combined. Fold in the apple last. Pour into prepared muffin tins and bake for about 21-23min, an inserted toothpick should come out clean.

For the caramel whipped cream whip the heavy cream with the caramel until stiff. Pipe onto cupcakes as desired and decorate with further caramel. Enjoy immediately.
