Apple Pie with Cream Cheese Pie Crust

I can’t believe I had forgotten about this apple pie with cream cheese pie crust! Sometimes you need to be reminded, in this instance it was my mom who actually baked the pie when I came for a visit for me to remember. I had sent her this recipe more than 15 years ago when I was fortunate enough to spent a year in Canada. This is an apple pie prepared with a cream cheese pie crust, so you will not need any egg or water. It basically has the cream cheese as the binder. Ironically, I had totally forgotten about this method of making pie crust, so I was very happy when she actually made this apple pie for my visit the other day.

My mom told me that she really likes this pie crust as it never fails her and she can also make it with her kitchen machine. It is very easy to roll out and keeps its shape. She often makes pie crust this way and chuckled when I stated the fact that I had completely forgotten about this recipe I sent her so many years ago. Silly me, here I was sending recipes the old-fashioned way by snail mail 15 years ago and then I completely forgot about the recipe myself. Well, better late than never, so today I am finally presenting this recipe to you. Just as the cream cheese pie crust contains only few ingredients, the same holds true for the filling, apples, sugar, cinnamon and a little bit of flour, that’s all we need. The entire recipe only contains six ingredients if you don’t count the salt, six! So better be sure that you have high-quality ingredients, especially the apples should be firm and rather tart, otherwise the pie will be mushy. The apples you see on the pictures on the trees are also the apples we used inside the pie. My parents have a few apple trees so we decided to make this pie with some of them. Naturally. This simple recipe has nothing fancy, nothing weird, it is straight-forward and good, that’s what it is, a lot of apples with a hint of cinnamon with a nice companion, cream cheese pie crust.

Apple Pie with Cream Cheese Pie Crust

Serves: One pie with double crust
Prep Time: 30min preparation + chilling Cooking Time: 30min

This apple pie with cream cheese pie crust contains only six ingredients and is as good as it is super easy and simple to prepare.


  • Cream cheese pie crust, alternatively all-butter pie crust, see here
  • 200 grams or 1 1/2 cups of all-purpose flour
  • 115 grams or 1 stick of cold butter
  • 250 grams or 8 ounces of cream cheese
  • A pinch of salt

  • Filling
  • 5-6 medium-sized apples, tart
  • 80 grams or 1/3 cups of regular sugar
  • 1 teaspoon of cinnamon
  • 2 teaspoons of flour



For the pie crust work the flour with cubes of cold butter into crumbs. Then add the cream cheese and salt and work into a dough. You can do this all by hand or using a machine. Wrap and chill for at least half an hour.


Meanwhile for the filling peel and slice the apples, add sugar, cinnamon, and flour and set aside.


Preheat oven to 230 degrees Celsius.


Roll out half of the dough to cover a pie form, fill with prepared apples and cover with second half of dough. Prick with fork. Bake for about 30min.
