Shame on me,  I haven’t posted enough slab cakes even though I really like them. I prepared this simple slab cake with an abundance of strawberries and whipping cream the first time about a year ago when we had a large family gathering. I count myself lucky for having managed to snap a picture of a cut slice, it was gone within seconds, it took my relatives very little time to consume. No wonder, because it is so delicious.

Einfacher Blechkuchen mit Erdbeeren und SahneThis cake consists of a simple cake as base, you cream together your ingredients, bake it and then you make a nice layer of whipping cream and spread about  a kilo of strawberries on top, which managed to marinate in some sugar and thus are extra juicy. You can easily prepare the base the day (or two) beforehand and also prepare the whipping cream and strawberries in advance. It is super versatile as you can pick your fruit and also add other flavors to the cake if you desire. I hope you enjoy it as much as we did and happy baking!

Simple Slab Cake with Strawberries and Whipping Cream

Serves: One 38x25cm sheet cake

Simple Slab Cake with Strawberries and Whipping Cream


  • Cake Base
  • 300 grams of butter, at room temperature
  • 200 grams of regular sugar
  • A pinch of salt
  • Zest of one lemon
  • 5 eggs
  • 100 grams of milk
  • 300 grams of all-purpose flour
  • 100 grams of cornstarch
  • 2 teaspoons of baking powder
  • Juice of half a lemon

  • Strawberries
  • 1 kilo of strawberries
  • 100 grams of regular sugar

  • Whipping Cream
  • 500 grams of heavy cream
  • 50 grams of regular sugar
  • 1 teaspoon of vanilla extract, see here how to make your own



For the cake baes line a baking sheet with about 38x25cm with parchment paper, heat oven to 180 degrees Celsius.


Beat the soft butter with sugar, salt, and lemon zest for several minutes until creamy and fluffy. Add eggs only one at a time.


Add milk, flour, cornstarch, baking powder and lemon jucie and only mix until combined.


Spread on baking sheet and bake for about 25-30min, an inserted toothpick should come out clean.


For the strawberries clean and wash them and cut in smaller pieces. Mix with sugar and let marinate in a bowl for about half an hour or longer (can also be prepared in advance if chilled).


For the whipping cream combine all remaining ingredients and beat until stiff peaks form. Set aside and chill.


Shortly before serving spread whipping cream on cake and strawberries with a bit of the juice. Immediately serve.


All three part can be prepared in advance. Tightly cover the cake and keep and room temperature, chill whipping cream and strawberries and only spread on cake shortly before serving.
