OK, this simple one-layer cake may not look that pretty, but I am telling you, it is so delicious! We have a one-layer chocolate base, which is then topped with whipping cream infused with cinnamon and plums that are simmered for a while. You need to serve the cake immediately, otherwise you may see something similar as I did, mainly that the plums move towards the plate. But be it as it may, it may not look the part, but it is sooo delicious!
Simmering or roasting plums is very common here in Bavaria in Germany. You can simply simmer them in their own juice as I did, or you may roast them in the oven. I decided for the simpler version and thickened them with some cornstarch at the end. If you are interested in further plum recipes, how about:

- Plum tart with two types of dough
This simple one-layer cake is served with whipping cream with a touch of cinnamon and roasted plums. For the one-layer chocolate cake line a 20cm/8 inch cake form with parchment paper and preheat oven to 180 degrees Celsius. Whisk together flour, cocoa, sugar, baking powder and salt in a large bowl. Add the soft butter in chunks as well as the vanilla extract and 60 grams of the milk. Mix for about a minute until moistened and crumbs form. Then whisk together 90 grams of milk, the egg, and oil in a small bowl and add in two steps while mixing. Do not overmix. Spread in prepared cake pan and bake for about 20-22 minutes. An inserted toothpick should come out clean. For the topping wash, cut and stone the plums and bring to a simmer with the sugar and water. Let simmer for about five minutes until plums release their juice. Meanwhile mix the cornstarch with a bit of water in a mug until you see no lumps, then add to the mix and let simmer for about another minute. The sauce should thicken. Set aside. For the whipping cream mix together all remaining ingredients until stiff peaks form. Spread the whipping cream on the cooled cake layer, then add the plums. Serve immediately, otherwise they same may happen to you as to me that the layers start sliding towards the plate.Simple One-Layer Plum Cake
