Flan can be described as a custard that originated in Spain and is now popular throughout all of Latin America. I already have quite a few flan recipes on here: flan as single servings, flan with pineapple, flan with coconut flavor, flan with coffee flavor, the Venezuelan version served as a cake named quesillo, Mexican chocoflan, which has an additional layer of chocolate cake and the cousin named leche asada (burnt milk). However, I somehow failed to present the most classic version to you, which I wanted to do today. So here you have classic flan with four ingredients.
What I like about flan is the fact that it is really simple to prepare, so perfect for beginners and that it only contains very few ingredients. Most of the time is needed for baking. You will also need to wait a bit before digging in as it first needs to come to room temperature and then has to set in the fridge for a few hours or overnight. So be patient. I highly recommend making it the day before. If you wonder how to get that caramel out of the mold without scrubbing, check out this blog entry.
This classic flan is made with 4 ingredients and is a famous custard in all of Latin America served with a caramel layer. Search for a savarin mold, which you can place inside a casserole dish or similar. Preheat oven to 150 degrees Celsius. Boil water for the waterbath. Melt 200 grams of sugar on medium heat. Pour into the mold, be fast, the caramel will harden almost immediately and is hot. Heat 100 grams of sugar with the milk and vanilla extract. Meanwhile whisk together the remaining 100 grams of sugar with the eggs. Try not to incoporate too much air. Add the heated milk to the eggs, stir, then pour everything into the mold. Place the mold in the casserole dish, fill the outside with boiling water. Cover with aluminium foil and bake on medium rack for about 80-90 minutes. Just as with cake, an inserted toothpick should come out clean. Let come to room temperature, then transfer to the fridge, best overnight. Loosen the edges and turn upside down on a large plate. You can briefly heat the mold in boiling water before turning upside down to loosen the caramel. Serve with some berries if desired.Classic Flan with 4 Ingredients
