Plum Cinnamon Cupcakes with Maple Cream Frosting

Today I am introducing plum cinnamon cupcakes with maple cream frosting. Just because. The main reason is because I love the mix of plums with cinnamon, there is nothing better than this combo in fall in my opinion.

The second reason is because you loved my simple plum tart with cinnamon streusel so much. No other recipe was clicked more than often in September. Even looking at all blog entries from 2018, it already ranks as No.5. The pictures below show the tart how I made it for my relatives during our holiday in Spain. I barely managed to take pictures, that’s how quickly it disappeared. I just love the fact that it is so versatile, I made it in a springform pan as there was no other option. Works just as well.

But let’s return to these cupcakes. I was craving plums with cinnamon and thought cupcakes may be an idea for that combo. So I checked Pinterest and also my favorite bloggers and bingo, Sarah from the blog Knusperstübchen (in German) had some plum cupcakes! But as always I had some ideas of what I would do differently and tried and adapted the recipe several times before posting it here. It is very important for me to be sure that the recipe is exactly how I like it before posting it here.

I also like the idea of baking the plum on the top of the cupcake with a few sprinkles of sugar to get a crunshy top. Whipping cream is super easy to make and is sweetened with maple syrup to give it some different touch. Seriously, I have to be careful not eating too many and I usually only it one before passing on all of my baked goods to family, friends, and colleagues.

Plum Cinnamon Cupcakes with Maple Whipping Cream

Serves: 12 regular cupcakes
Cooking Time: 20min preparation + 20min of baking

Ingredients

  • Plum Cinnamon Cupcakes
  • 6 plums
  • 75 grams of butter at room temperature
  • 100 grams of brown sugar + 1 tablespoon extra
  • 2 eggs, size L
  • 1 teaspoon of vanilla extract, see here how to make your own
  • 75 grams of buttermilk
  • 140 grams of all-purpose flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of cinnamon + 1/2 teaspoon extra
  • 1 teaspoon of ground cinnamon

  • Maple Whipping Cream
  • 300 grams of heavy cream
  • 2 tablespoons of maple syrup

Instructions

For the plum cinnamon cupcakes preheat oven to 180 degrees Celisus and line 12 cupcake forms with cupcake lines. Half plums and take out kernel.

Cream the soft butter with 100 grams of sugar in a large bowl for about two minutes. Add the eggs, one at a time and mix, add vanilla extract and buttermilk last and mix again until well combined. Add all other remaining ingredients and only mix until combined. Divide batter between the 12 cupcakes, it's normal that they are only half full. Place half a plum on each and sprinkle with an additional tablespoon of sugar and 1/2 teaspoon of cinnamon. Bake for about 20min, an inserted toothpick should come out clean.

For the maple whipping cream beat heavy cream with maple syrup until stiff. Pipe cream on the cooled off cupcakes, if desired, sprinkle with additional cinnamon.
