If you were to wake me up in the middle of the night, pointing a gun at me and asked which food I would want to eat until the end of days, I would probably say cookies. Cookies are just so comforting. I especially like Chocolate Chip Cookies. If you give me a chocolate chip cookie with caramel, you got me sold.

I tried more than 20 different recipes before I finally landed on this one. Cookies are comfort food and soul food, in my opinion there is no better dessert than cookies. I love the fact that they are easy to transport and are enjoyed by children and adults alike. Let alone the fact that usually you can whip them up in under less than 20 minutes.

Chocolate-Chip-Cookies mit KaramellFor that reason, my dear friends, I decided to post a cookie recipe, regardless of the fact that people are currently on diets. Seriously, just drop it and grab one of these delicious cookies, I mean, who can say no to a chocolate chip cookie with caramel?

Chocolate Chip Cookies with Caramel

Serves: 18 - 20 cookies
Cooking Time: 10 min preparation + 1 hour chilling time + 10-14min baking time

Ingredients

  • 170 grams of unsalted butter
  • 120 grams of brown sugar
  • 70 grams of regular sugar
  • 1 egg and 1 egg yolk at room temperature
  • 1 teaspoon of vanilla extract, see here how to make your own
  • 280 grams of all-purpose flour
  • 1 1/2 teaspoons of cornstarch
  • 1 teaspoon of baking soda
  • 180 grams of chocolate chips (or chocolate chunks, M&Ms, etc.)
  • 20 caramel bites, such as Rolos

Instructions

Melt the butter in a small pot on the stove or in the microwave. Put sugars in a large bowl and add the melted butter. Stir with a spoon to cool off a bit.

First add the egg and then incorporate the egg yolk and the vanilla. Mix flour, cornstarch and baking soda on top and mix until a homogeneous dough is formed. Fold in chocolate chips. Chill cookie dough for at least half an hour in the fridge. Dough can be kept in the fridge for up to three days.

Take dough out of the fridge and line two baking sheets with parchment paper. Preheat oven to 180 degrees Celsius.

Form balls the size of a walnut with your hands and put about 8 to 9 cookies on the first baking sheet. The cookie dough may feel a bit hard to work with, especially if you left the dough in the fridge over night. This is normal. The warmth of your hand will make it easier to form the cookie balls. Place on each a Rolo and another cookie. Roll this double cookie into one big cookie.

Bake cookies between 12-14 minutes. The edges should be browned, yet the center still soft. Check your oven. Cool on baking sheet for a few minutes before transferring to a cooling rack. I usually save a few chocolate chips and put them into the cookies while they are cooling off. Repeat with second batch.
