Did you have fancy birthdays when you were a kid? I mean, I do know that we celebrated, but I feel back in the days there was much less hassle. Today everything is planned and thought of, be it the invitation, the decoration, the cake, and of course the gifts. I don’t know which one is better, but I do know that I would have like a very pink birthday cake on my birthday as a girl. Since I love raspberries, I for sure would have liked a very pink raspberry cake. I do not recall ever getting such as cake, but why not make it now? With this blog post I also have the pleasure as giving these sweet little cake toppers away you see on the cake. They are from the talented Ellen Martens.

I usually try to avoid too much artifical food coloring. Especially if I know children are going to eat my cake. But the below cake was only colored with the many raspberries it contains. Both, the cake layers as well as the frosting have a lot of reduced raspberry puree as one of the main ingredients. We are going to reduce the raspberries ourselves, it is really not that hard. The pink birthday cake contains a vanille cake base, which gets extra flavor from the reduced raspberries and is filled with some cream cheese frosting. It is then topped off with freeze-dried raspberries and/or the cake topper you can see.

I won’t deny, the cake does require a bit of work, but in my opinion it is worth the effort, especially if you make one girl or boy happy with it. The good thing is that you can prepare many components in advance. For example, you may make the cake layers two days in advance. You just need to be sure to wrap them tightly and keep them at room temperature. Also, the raspberries can easily be reduced in advance. I would recommend chilling them fully covered. You may even go as far as preparing the entire cake. The flavor will intensify on day 2 and it also gives you the chance to prepare and relax on the big day itself. However, I would only recommend decorating it shortly before serving.

Pink Birthday Cake

Serves: One 18 cm/6inch ∅ springform
Prep Time: 1hr Cooking Time: 30min Total Time: 1 hr 30min

This pink birthday cake is perfect for a children's birthday and does not need any artifical flavoring.

Ingredients

  • Cake Layers
  • 500 grams of frozen raspberries
  • 180 grams of regular sugar
  • 170 grams of butter, at room temperature
  • 5 egg whites (150 grams)
  • 1 teaspoon of vanilla extract
  • Reduced raspberry puree from above
  • 120 grams milk
  • 200 grams flour
  • 85 grams of cornstarch
  • 2 teaspoon of baking powder
  • 1 teaspoon of baking soda

  • Filling
  • 250 grams of whipping cream
  • 70 grams of regular sugar
  • 1 teaspoon of vanilla extract
  • 250 grams of cream cheese
  • Reduced raspberry puree from above
  • About 200 grams of raspberry jam

  • Decoration
  • Freeze-dried raspberries
  • Meringue kisses
  • Cake Topper

Instructions

Place the frozen raspberries in a pot and bring to heat. Simmer for about 20-30 minutes while stirring without anything further until reduced half in size. Set aside.

For the cake layers line the bottom of two 18cm/6 inch cake pans with parchment paper. Preheat oven to 180 degrees Celsius.

Beat the sugar with the butter for about two minutes until creamy and fluffy. Then add the egg whites and beat on high for a minute. Add vanilla extract, half of the raspberry puree and the milk and make sure everything is combined. Then add the flour, cornstarch along with the baking powder and soda and only mix until combined. Pour evenly into the prepared pans and bake for about 30-35min. Let cool and release from pans.

For the filling beat the cream with the sugar and vanilla extract until you have whipped cream, add the cream cheese and the second half of the puree and only mix until combined.

Cut the cake layers in half so that you have four cake layers in total. Spread about two tablespoons of raspberry jam on the bottom layer. Then spread about 3 tablespoons of filling. Place the second cake layer on top and repeat, do the same with the third layer. Place the fourth layer on top and evenly frost the sides and top with the remaining filling. Using a cake scraper or a long knife, make sure to have a smooth outside. Chill the cake until ready to serve. Shortly before serving decorate with freeze-dried raspberries and meringue and the cake toppers. Chilled the cake will keep for a few days and will intensify in flavor.

    Hi!
    Sehr lecker! Meine Mutter hat früher nur ihre panamatorte gebacken. Auch heute backt sie nicht. Ich kannte dann nur noch apfelkuchen, lila Kuchen und frischkäse Zitronen torte von Oma. Aber als Kind mochte ich Omas lila Kuchen am liebsten. Wenn ich heute wählen könnte, wüsste ich es nicht wirklich. Vielleicht was mit Kokos und tropical. Oder mit Äpfeln. Oder frischkäse zitrone mit löffelbisquit Boden! Die hübsche deko käme auf eine torte für ein 4. Jähriges pferdemädchen! Ich wünsche euch ein schönes Wochenende! Vlg Tine

    Also heute ist der Käsekuchen meiner Mutter legendär. Und meine Oma hat früher ganz tolle Schneckennudeln gemacht. Leider war ich als Kind aber eher schleckig und wäre mit einem ganz einfachen Zitronenkuchen oder Mamorkuchen viel glücklicher gewesen…

    Zur Kinderzeit gab es an Geburtstagen immer bunten Streuselkuchen und was anderes hätte ich auch wohl nicht gegessen 😀

    danke für das tolle Rezept..ein Hauch von Barbie-Torte.
    Früher war ja Fondant nicht so bekannt..gewünscht habe ich mir eine Drache Kokosnuss Torte, da ich seine Bücher so liebte.
    Doch meine Mum hat mir tolle Torten gebacken…Käse-Sahne torte, Marzipantorte und nun macht sie mir Torten mit Fondant….nun bin ich erwachsen und bekomme Torten mit Fondant Fußball-Logo.
