Simple Apple Cake with a lot of Apples

This simply apple cake with a sugar and cinnamon crust is exactly the kind of cake I like. It basically is a lot of apple cubes that are held together by a bit of batter. Yes, you will need to peel and cut 1 kilo of apples, but other than that it comes together quickly. I personally am a huge fan of this cinnamon and sugar crust, it simply takes it to the next level. It is rather simple, the cake is baking and after about 30 minutes you sprinkle it with sugar mixed with cinnamon. You will then need to bake the cake for another 15 minutes and then it is done. Voilá, there you have the magic happen. I can only encourage you to make this cake while it is still so cold and wintery.

I don’t know about you, but I have had enough of winter. I usually don’t mind January too much, but as soon as it  is February, I can’t wait for spring to come. I didn’t grow up in a family where winter sports was a thing, it was too expensive and too far away. In the north of Germany not everybody knows how to ski or snowboard. I was used to cold and wet winters, not necessarily with a lot of snow. However, now I live in the south of Germany, in Munich and winter is not that bad. There are a lot of sunny days and more snow than what I am used to. But if it were up to me, let’s move on to spring, to warmer and sunnier days and more green. But as long as we have snow and it cold and we have minus degrees, let’s bake and get warm and cozy with this simple apple cake. Simple Apple Cake with a lot of Apples

Serves: One springform 24-26cm in ∅

This simple apple cake is made with a simple batter that is then combined with a lot of apple cubes. It also has a sugar and cinnamon crust.

Ingredients

  • Apple Batter
  • 1 kilo of tart apples
  • 125 grams of butter, at room temperature
  • 125 grams of regular sugar
  • 3 eggs
  • 250 grams of all-purpose flour
  • 1 teaspoon of baking powder

  • Sugar Crust
  • 30 grams of regular sugar
  • 1 teaspoon of cinnamon

Instructions

Wash, peel and cube the apples. If desired, you can mix them with about a tablespoon of lemon juice so that they do not brown.

Preheat oven to 190 degrees Celsius and line the bottom of a 24cm springform with parchment paper.

Cream the soft butter with the sugar for a few minutes in a large bowl until light and fluffy, mix in each egg separately. Sieve flour and baking powder on top and only mix until combined. Fold in prepared apple pieces. Evenly spread in the prepared springform and bake for about 30 minutes on medium rack.

Meanwhile prepare the sugar crust by combining the two ingredients. Take out cake at the 30min mark, evenly sprinkle with the sugar mix and bake again for 15 minutes. You can eat warm and may serve alongside some whipped cream.

The cake will keep for a few days if kept airtight and also freezes beautifully.

    Ha! habe gerade einen Apfelkuchen in den Ofen geschoben, mich hingesetzt und die Mailbox geöffnet! Da lacht mir dein Apfelkuchen entgegen!
    Mein Rezept ist ebenfalls ein einfacher Rührteig mit Vanille, Zitronenschale und Rum. Apfelspalten versinken darin. Zum Schluss kommt ein Topping aus Butter, Honig, Mandelblättchen und Zimt darauf.

      Uh, da muss ich gleich bei dir schauen. Ich habe schon wieder Lust einen zu machen, hier haben wir bestimmt 15cm frischen Schnee in München, da ist ein warmer Kuchen perfekt!
