British Hobnobs (Crunchy Oatmeal Cookies)

Hobnos are the perfect soulfood. My hubby and me love them on a grey or rainy day. Cookies are the best, usually few ingredients, very little to prepare and so good to eat. A cookie a day keeps the doctor away should be the saying. These British Hobnobs are probably best described as a crunchy oatmeal cookie, which is covered in chocolate.

There is only one thing that is a bit tricky when making these cookies. I personally tried different things and ended up rolling them in balls right after making the dough. You can also try to roll out the dough between two sheets of parchment paper, but this method seems to be working just fine. In case you try different methods, please let me know.

Hobnos from Britain, Crunchy Oatmeal Cookies

Serves: About 16-20 cookies, depending on size
Prep Time: 20min – Cooking Time: 10min – Total Time: 30min

Hobnos are a cookie from Britain that can be described as a crunchy oatmeal cookie. They usually have a chocolate topping.

Ingredients

  • 120 grams + 40 grams of rolled oats
  • 100 grams of all-purpose flour
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1 pinch of salt
  • 125 grams of butter
  • 80 grams of brown sugar
  • 40 grams of regular sugar
  • 1 tablespoon of Golden Syrup (or corn syrup, or honey)
  • 1 teaspoon of vanilla extract
  • About 1-2 tablespoons of milk
  • 150 grams of semi-sweet chocolate

Instructions

1

Line a baking sheet with parchment paper. Preheat oven to 180 degrees Celsius. Process about 120 grams of the rolled oats, keep the rest intact. Mix both with flour, baking soda, baking powder, and salt in a bowl. Heat butter, sugars, syrup and vanilla extract until the butter has fully melted. Pour on top of the dry ingredients. If the mixture is very dry, add a bit of milk.

2

You should be able to press the dough with your hands into small balls. Place on prepared baking sheet and bake for about 9-10 minutes. They should be golden. Let cool. If desired, cover with melted chocolate. Once the chocolate starts drying, create a pattern with the fork (see pictures).

3

If kept in a cookie tin, they will keep for a week and they freeze beautifully.
