Moist and delicious pumpkin layer cake with a buttercream that actually contains brown butter and cream cheese, that’s what I am introducing today. Reason for introducing this cake here ist two-fold. Reason #1 has to do with a German blog event I hosted. It had all to do with pumpkin recipes. For that reason I made these delicious pumpkin cookies with cream cheese frosting and also this vegan pumpkin pasta with only two ingredients.

Moist Apple Almond Cake

I often take cake to work. My colleagues are some of my regular test eaters. And since I bring cake to work often, I usually can tell if a recipe stands out. That was definitely the case with this apple almond cake. Suddenly I found post-its saying “Thank you to our baking queen” or “Thanks for making my Thursday morning much sweeter.” My conclusion? This apple almond cake is a keeper, it is a keeper because no other cake has received as many post-it notes. It definitely needs to be posted on the blog. If you want apples in your coffee cake, this is the cake to choose. You have some apple in the cake dough, a lot of apple compote on the top with some nicely browned almonds plus one full apple as pretty decoration on the top. I mean, you got APPLE cake for sure with this one.

You may not think much about it, but here in Germany pumpkin is usually not served in sweet goods, you will find tons of savory recipes, but sweet ones not so much. I sometimes wonder why. There is a reason why pumpkin is very popular in North America in any baked goods, it has a sweet kind of flavor and carries a lot of fall flavor, makes sense to me. Yes, you read right, today I am serving maple syrup bacon cupcakes! This is definitely an unusual flavor combination. The first time caramelized bacon got my attention was when I saw the Irish blogger using bacon for scones. And once I was paying more attention to bacon in sweet goods, I suddenly saw it on Pinterest, used in and for cupcakes. If you think using bacon in sweet cupcakes is crazy, maybe I can convince you if I say that the bacon is caramelized. I have to say, I do love this crazy sweet and salty flavor combination.

I have to admit, I love fall, especially if you check the ground of a dark forest, you will find mushrooms, just like the ones I am presenting today. No, I am kidding, you won’t find these mushrooms in the forest, they are actually made from meringue. However, I do find that they do look very much like their original, don’t you think? I am sure these mushrooms are going to be a show-stopper. And the best thing is, they are basically made from two ingredients. I made cute pumpkin cookies in pumpkin shape! Reason was for Pinterest apparently telling me to make pumpkin cookies, all I saw was something pumpkin. So I obeyed and thought, why not make some pumpkin sugar cookies? For this I turned to my favorite sugar cookie recipe. Because, you know, IF you make a cookie shaped like a pumpkin, it sure should contain pumpkin. At least in my opinion. And then I also wanted some fall spices, like cinnamon, cloves, ginger, and nutmeg. So I threw in this spice mix. It actually is very similar to the one of my beloved pumpkin spice latte. And in the end I got these cute little cookies.

My Eight Favorite Fall Recipes

Have I mentioned before that I love fall? It is my favorite season. I just love everything, the cozy scent of cinnamon, warm and snuggly blankets, hot chocolate, the golden sunlight, there is very little I don’t like about fall. I even enjoy the rain, even if I have to wear a rain jacket and rain pants when I cycle to work and feel the raindrops hitting my face. It’s like an old friend I am happy to say hi to. For that reason it is time that I give you a list of my favorite fall recipes. Oh, there is so much you can bake with, apples, plums, cinnamon, pumpkin, I just love fall ingredients! As today is the first day of fall, I officially wanted to do a collection of fall recipes. I hope you find something to your liking!

#1 Pumpkin roll in the shape of a pumpkin

This is vegan yeast dough that is pretty easy to prepare and is definitely going to be a show-stopper. I brought these pumpkin rolls to a party once and I was asked to pass on the recipe several times.

2. Cute owl cupcakes

I made a mistake the first time I made these. I gave these cute little owls names. And then it was so hard to actually bite into one of these big eyes… Really bad idea. You will need Oreos and M&Ms, it’s really simple to make.

Pumpkin roll with apple buttercream? Pumpkin doesn’t play a very important role in baking here in Germany. At least until recently. No, we have not yet discovered its use for cheesecake and the like.

Can I confess something? I have never been a big fan of pumpkin pie. I know, kill me know. But I just don’t like the flavor that much. I have tried my share of pumpkin pies, but still. That’s why I have ignored pumpkin mainly in baking.

But then I met my hubby and hubby is a big fan of pumpkin pie. So I started looking for good recipes. This recipe is currently his favorite. If you like pumpkin pie, try it, it is great. But as stated, I didn’t get excited. Because I don’t like such a dominant pumpkin flavor.
