Russian Honey Layer Cake – Medovik

Today I am introducing the cousing of the famous Russian Napoleon cake: Medovik. Just as Napoleon is a layer cake of twelve layers, so is Medovik. The main difference is the dough, Medovik does contain honey, but Napoleon does not. Just as there are several options for the filling for Napoleon, I opted for the traditional sour cream filling. This cake also as a crumb crust, which is leftover and baked dough that was processed into crumbs and then patted on the outside of the cake. Since you need to bake 12 layers of dough, this is a warning that this recipe requires time. I definitely believe it is worth all the effort. Usually I prefer fruity cakes with fresh fillings, however, once I tried Medovik, I secretly went for a second helping, it tastes amazing.  Below you will see the recipe for a cake slightly smaller in diameter. Chocolate Layer Cake with Raspberry Curd

Chocolate layer cake with raspberry curd, who wants a piece? Anybody who knows me, knows that I am a huge chocolate lover. Yes, I do have an entire section just dedicated to chocolate. Check out my chocolate category to get you transported to chocolate heaven. As my birthday is approaching soon and as some states here in Germany will start school soon again, I decided to present a real decadent cake again. Yes! I know, I know, at least for my standards I have tried to cut back on too many cakes this year. So far I have presented Sachertorte, a strawberry chocolate cake and a lemon sponge cake with cranberry filling. That is basically a cake every second month, which isn’t too much for my standards. But let’s get back to this delicious chocolate layer cake.

Moist Strawberry Chocolate Cake

This is the perfect cake for Valentine’s Day, a moist and decadent strawberry chocolate cake. Who would like to get a piece of this deliciousness? The cake is made of a devil’s food cake, the filling is made with real strawberries and since it is not the season yet, we will use frozen strawberries. The final touches are a chocolate drip and fresh strawberries dipped in chocolate. Who wants a piece?

I already published this vegan Oreo cake on the blog. Last year, that recipe was among the top 10 of the most clicked recipes. So I had been toying with the idea of actually making a non-vegan version as well. When I presented below version to some test eaters, all of them said that it does indeed taste like a gigantic Oreo, just somehow better.

When Meghan Markle and Prince Harry got married in May 2018, the combination of lemon and elderflower were all the rage. Yes, I also made a mini three-tiered elderflower lemon cake. Today, I decided to give this combo another chance. This year elderflowers are in full bloom at the moment, so you may even have the chance to make the cordial yourself. The new version of this royal combination contains moist lemon sponge cakes, lemon curd and a heavy cream and mascarpone filling infused with elderflower cordial. My cake only has one tier and I decided to decorate it with dried flowers and some fresh elderflowers. However, it is up to you how you want to decorate your cake.

Fifth Blog Birthday and a Raspberry Chocolate Cake

In four days on February 15th, this blog will turn five. That’s reason to celebrate! That’s why I am offering this super delicious raspberry chocolate cake. Why I am doing it four days in advance and why this is the second chocolate raspberry cake on the blog, I will let you know below.

I don’t remember distinctly why I hit “publish” on a Thursday, which was February 15th, 2017. I believe I had made this French lemon tart for Valentine’s. My hubby loves anything with citrus fruits. At the beginning of this blog I thought I wouldn’t publish anything other than cookie recipes and recipes my husband requested. It may sound stupid, but it also holds true in baking. Practice makes perfect. I baked, and baked, and baked. I would simply pick recipes I liked on the Internet. If I happened to make the recipe again, I would usually tweak it a bit. At the beginning I followed recipes as much as I could, tried to understand the basics. At some point I would start creating my own recipes. I would probably use a cake based I used in recipe X, but liked the filling of recipe Y better and would happily mix and match. In 2019 a good friend of mine asked me whether I would be willing to bake her wedding cake with 100 guests. I agreed as I believed to have one full year to practice. Due to COVID one year turned into two, so I practiced layer cake after layer cake. There is a reason that I published some many cake recipes in 2020 and 2021. Many of those were trial runs for the wedding cake. Among these was my first chocolate raspberry cake. Very soon I learned that this was super popular. You guys made that recipe your number 2 in 2020 as well as 2021, I just checked. I am so happy every time somebody bakes it again.

My Ten Favorite Layer Cakes

My ten favorite layer cakes, today I am going to introduce them to you! I have to spill a few secrets today, one of them is that you make me so happy! Just looking at the reader’s favorite recipes from 2019 and 2020, I am astonished that so many layer cakes made it to the top. You know, a layer cake usually means several different components. A layer cake means quite a bit of work. This is not like a simple cookie, layer cakes will take time. Yes, and I have also learned a thing or two along the way. Did you know that I didn’t dare to cut a cake into more than two layers? The cake layers were so crooked, it was aweful. Until I learned that you don’t cut through immediately, but you will go around just about a centimeter or so and slowly work your way through. That’s how you get even cake layers! Yes, I have also failed, cakes didn’t turn out or melted away, but regardless, I love making cakes. You apparently, too, at least you seem to really make a lot of them.

And let me spill another secret. I have been making my own birthday cake for years. Each time I am like, OK, I don’t care what people want or which recipes may go viral, I will simply invent a cake I like and which is something for MY tastebuds. And then I sit down and invent a recipe I like. Since I am chocoholic many of my cakes will have some chocolate part. Interestingly enough, many of these layers cakes I made not caring about readers’s interest or whether this was something worth posting, have made it to the top ten. I am beyond happy that you seem to have a very similar taste. I mean, maybe I should only post cakes I like and then somehow they will make it to the top. That makes me so happy! Third Blog Birthday and Strawberry Elderflower Cake

Where is the champagne? Where are the streamers and glitter? You are invited to a nice helping of this strawberry and elderflower cake! Why, you ask? I am celebrating my third year of blogging. The first recipe that went online on my blog was this lemon tart, which I still love to make. I honestly never thought I would be blogging for three years. I have always been a person who just learns things by doing them. Instead of figuring everything out beforehand, I just give it a go and see what happens. The reason I started this blog was because I got tired of having to pass on recipes I was asked to provide to my friends and family. I also wanted to have some kind of organization so I thought a blog may come in handy. I would have never believed that I would enjoy taking pictures as much as baking. Mind you, I once was a professional pianist, I always thought my visual ability was not as good. However, I am still enjoying my blog immensely, be it baking, food photography or anything else, and for that reason I hope there are many more blog years to come.
