Vegan Chocolate Cake with Oreo Chocolate Cream Filling

Did you know that Oreos are vegan? I didn’t. I always assumed that Oreos contained some kind of milk product. For that reason I was more than happy when I learned that Oreos indeed are vegan and can be used in vegan recipes. Today I invited Ramona to create a guest blog post as I am still trying to catch up after a long holiday in Colombia (and yes, you will find some new Colombian recipes here very soon!). In my opinion she has brought along some super interesting recipe. Let’s give the floor to her:

Oreo Cake

Hello, my name is Ramona and I usually blog about vegan food on SomeGreenLife. Because Jenny was on long vacation and still is catching up, I am allowed to take over today. For this special occasion, I have an amazing recipe: Vegan Chocolate Cake with Oreo Chocolate Cream Filling. Happy baking!

Oreo Cake

Alright, but now let’s have fun with this cake!

Vegan Chocolate Cake with Oreo Chocolate Cream Filling

Serves: One 18 cm ∅ springform
Cooking Time: 20min preparation + 40min of baking

Ingredients

  • Cake Batter
  • 400 grams of spelt flour
  • 150 grams of coconut sugar
  • 3 teaspoons of baking powder
  • 100 milliliters of canola oil
  • 450 milliliters of lukewarm water
  • 1 vanilla pod
  • 4 Oreo cookies
  • 3 teaspoons unsweetened cocoa powder

  • Filling
  • 1 package instant pudding with chocolate flavor
  • 500 milliliters of rice milk
  • 2-3 tablespoons of coconut sugar
  • 10 Oreo cookies

Instructions

For the cake batter first preheat oven to 180 degrees Celsius.

Mix flour, sugar, baking powder in a large bowl. Add seeds scraped from a vanilla pod, oil and water. Stir well.

Separate 1/3 of batter in another bowl. This will be the light-colored batter. Add cocoa to the remaining batter. Scrape the filling out of Oreos and add the filling to the light batter and the cookies to the dark batter. Stir both well.

Meanwhile, butter and flour two round cake pans (18 cm in diameter). Bake the light dough for 20 minutes and the dark dough for 40 minutes. Let cool.

For the filling mix 50 milliliters of rice milk with the instant pudding and stir well. Bring the remaining rice milk with coconut sugar to a boil. Add pudding mix and bring to a boil again. Let the chocolate cream come to room temperature while stirring once in a while.

Crush eight Oreo cookies and add them to the cream. Cut the dark cake in two halves and cover the first half with the chocolate cream. Place the light cake layer on top, add one layer of chocolate cream, then add the second layer of chocolate cake. The top should be again covered in chocolate cream.

Sprinkle cake with the remaining two Oreo cookies (crushed). Chill before serving.
