Snickerdoodles are America’s answer to German cinnamon stars! I love snickerdoodles and I find it super exciting every time a German tries one and declares it the new favorite cookie. Snickerdoodles are easy to prepare and are similar to how sugar cookies are created. You will need cream of tartar for these beauties to stay soft and puffy. The recipe does not require any chilling.

One of the main differences between American and German cookies is the fact that German cookies normally do not require to be chilled. You will find American recipes like this one that does not require any chilling, but in general most do. Why this is the case, I still haven’t fully figured out, but be it as it may, this is a fast recipe, you cream your butter with sugar and later eggs, add the dry ingredients, roll into balls, which you coat in a sugar and cinnamon mix, and then it is time for baking already! So if you are a seasoned baker, you may be done within half an hour from beginning to end for this recipe. If this is not the perfect motivation, I don’t know what is. Soft Snickerdoodles

Serves: About 24 cookies, depending on size

These soft snickerdoodles don't require any chilling and will keep soft for days

Ingredients

  • 230 grams of butter at room temperature
  • 200 grams of regular sugar
  • 1 egg and one egg yolk
  • 2 teaspoons of vanilla extract, see here how to make your own
  • 375 grams of all purpose flour
  • 2 teaspoon of cream of tartar
  • 1 teaspoon of baking soda
  • 1 1/2 teaspoons of cinnamon
  • A good pinch of salt

Instructions

First beat the butter for several minutes until light and fluffy. Then add the sugar and cream until fully combined. Add the eggs and vanilla extract and beat until fully incorporated. Add all other remaining ingredients, the dough is going to be heavy. Only mix until combined.

Then line two baking sheets with parchment paper and prepare a small bowl with about 40 grams of regular sugar and 1 teaspoon of cinnamon. Preheat oven to 190 dgrees Celsius.

Take off about one tablespoon for each cookie and roll into small balls. Then coat in the cinnamon and sugar mix and bake for about ten minutes. If the cookies are still very puffy, you can press them down with the back of a spoon. You may sprinkle additional sugar and cinnamon on top.
