Happy Easter! Today I am presenting a very simple cake, which we are going to make in a lamb mold. Yes, you may make this cake in a bundt cake form, but for Easter it needs to be more special. Mind you, if you make it in a bundt form, be sure to use a small one for about 900ml. What I like about this cake is the fact that it can easily be made in advance and also freezes beautifully. In Germany, it is common to drink Eierlikör (similar to eggnog) for Easter, so if you want and have some at hand, you may add a bit of it. Below I give ideas if you want your cake to be alcohol-free.

Have I mentioned that my hubby is a huge fan of citrus fruits? I will admit, I don’t mind them either. It probably comes as no surprise then that I have tons of recipes on my blog with a citrus touch. I love any fresh and yellow, especially in winter. I also don’t mind the vitamins (yeah, I know, we are still talking about cake). I learned not that long ago that lemons, limes and the like are usually harvested in winter, sometimes in January or February. For that reason I thought it might be a good time to share 16 recipes with these fruits, I hope you find something you enjoy!
#1 Lemon Mousse or Lemon Posset
This dessert comes together in minutes and just looks great in the lemons!
I would like to start off 2024 with a stew from the north of Spain. The two main ingredients are potatoes and chorizo sausage. Normally the stew is seasoned with either the paprika paste called “pimiento choricero” and/or with the smoked paprika powder “pimentón de la vera”. Here in Germany you will find smoked paprika powder, so that is why I went with that. However, feel free to order the “real” ingredients online. I got to learn about this dish in the north of Spain. It comes from the region La Rioja. Quite a few of the relatives of my husband live there. I love this stew in winter, it is hearty, warming, and it is pretty easy to prepare. We are fortunate enough to receive a parcel with chorizo and such every Christmas, so we don’t have to improvise or replace ingredients. I hope you enjoy it as much as we do.
Everybody talks about sustainability and I am doing my best not to waste resources. Today I decided to put this into practice by using leftovers from Christmas and make something delicious with it. In my opinion a pie is the secret to any leftovers. As soon as you sandwich leftovers between pie dough, it makes it so much better. And to make it even more convenient, you can freeze the unbaked pie, so you can enjoy it at a completely different time and don’t have to eat the same thing for a week. Plus, even something like gravy can be hidden in this pie. The pictures show a pie that contains leftover cranberry sauce. Another version I made was with some apple and raisins. Both were extremely delicious.
Today I am going to introduce you to my favorite chicken soup, which was invented by my hubby. I am often asked how we do in the kitchen, and my answer always is, he cooks, I bake. There is a reason my blog is called “Jenny is baking”, I enjoy doing things step by step, measuring ingredients. Being exact is more my thing. I find it amazing that you can make so many different creations with flour, butter, sugar, and eggs. But let’s get back to the topic at hand: chicken soup. This soup is the perfect soul food. It contains delicious chicken shreds, creamy potatoes, carrots and peas as vegetables and is made with broth from scratch. I have been fortunate enough to eat this soup when I was sick and it did warm my soul.
Today I have a small three-tiered chocolate wedding cake for 10-12 people for you. This is a chocolate cake, which is filled with blackberry cream and frosted with a delicious chocolate frosting. I decorated it with fresh blackberries (duh), figs, and rosemary sprigs. I wanted to do three tiers even though there were few guests because I find it looks prettier than one plain cake. As the wedding took place at the end of September, I wanted to make sure to use seasonal ingredients and for it to taste like fall. Other than the wedding cake with chocolate drip, this one would remain plain, the main feature it being a chocolate wedding cake. I knew I was going to decorate it with fresh fruit and herbs of the season.
Today I am doing a recap, 12 recipes with apples. I normally don’t like to eat a plain apple just like that, but I am all in, especially in fall and winter when it comes to apple slices in porridge, somehow app by les are extra perfect for this occasion. This year we got to do apple picking already. Some farms close to Munich offer this option. We went to the Holzerhof in Ismaning (I am not paid to mention this). You can pick apples as well as plums and it is a super pleasant experience. When you get there, they will let you know which type of apple you may find where and then let you to it, so you are free to try whatever apple type you want. I probably sound like a broken record, but dulce de leche is as popular in Latin America as is Nutella in Europe. This caramel is made from milk and sugar. You will find plentiful recipes featuring dulce de leche. It may be used as a filling or it will serve as a thin layer. It can be a simple dollop served with flan.
