I don’t know why, but our local grocery store stopped selling Baileys even before the Corona virus craziness. I was a little sad about that as I love drinking this liqueur. So I decided to do a little research. Much to my amazement, it is really easy to make. It takes less than ten minutes if you have all ingredients at hand, so from now on I will make my own Irish cream!
It is a shame that there are only a few drinks on this blog. You may also enjoy a Mojito Slush, a Strawberry Mojito, or a Pumpkin Spice Latte? Even if it is a tradition in Germany to drink egg liqueur for Easter, I decided to go with my favorite liqueur regardless, even if it may not be as trendy at the moment. Since it is called cream, yes, you will find cream in this cocktail. However, one little trick is to add sweetened condensed milk as this will already provide all the sweetness you need and makes it even creamier. I can assure you, it is really easy to prepare.
Homemade Baileys or Irish Cream is prepared in less than 10 minutes and keeps in the fridge for a few weeks. Brew the espresso and stir in the cocoa powder immediately. Let cool off. Meanwhile prepare the remaining ingredients in a bowl and whisk in the coffee mix. Blend for about 30 seconds either with a blender or a mixer. You only want it to get a little foamy, but you don't want to whip whipping cream. Pour into sterilized bottle and chill. Keeps for about two weeks if chilled.Homemade Baileys or Irish Cream
