I have to say, bundt cakes are a huge thing in Germany. I don’t have that many on my blog, but you may like this wintery cranberry orange bundt cake, or this one made with yeast dough and filled with raspberries. Another chocolate bundt hides some red beet and is so delicious. Today I am bringing you this very moist chocolate bundt cake with pear chunks and some additional chocolate and walnuts. What do you say, would you like to have a piece with me?

Serves: One bundt cake
Prep Time: 30min Cooking Time: 1hr Total Time: 1hr 30min

This chocolate bundt cake is prepared with pears and garnished with some melted chocolate and walnuts.

Ingredients

  • Bundt Cake
  • 3 medium-sized pears
  • 4 eggs
  • 250 grams of butter at room temperature
  • 200 grams regular sugar
  • 1 teaspoon of vanilla extract, see here how to make your own
  • 300 grams of all-purpose flour
  • 40 grams of unsweetened cocoa powder
  • 3 teaspoons of baking powder
  • 200 grams of milk

  • Decoration (optional)
  • 100 grams of semi-sweet chocolate
  • 1 tablespoon of neutral oil
  • A handful of walnuts

Instructions

1

For the bundt cake cube the pears and set aside. Butter and flour your bundt cake form thoroughly. Preheat oven to 180 degrees Celsius.

2

Separate the eggs, keeping the egg whites in a larger bowl. Then beat the butter for about five minutes in a mixing bowl and add one egg yolk at a time until each is fully incorporated, add vanilla extract. Then add in the dry ingredients and the milk and only mix until combined. The dough will be very heavy and thick. Beat the egg whites separately until soft peaks form. Fold in meringue and pear chungs carefully. Pour into prepared bundt cake form and bake for about 70 minutes or until an inserted toothpick comes out clean.

3

I like to cool off my cake on a damp towel, it is so much easier to release the cake later once it is cool.

4

For the glaze melt the chocolate with the oil on low and pour onto cake. If desired, chop a few walnuts and decorate cake with it.
