Vegan Chocolate Chip Cookies with Tahini

Vegane Chocolate-Chip-Cookies mit Tahini

Chocolate chip cookies with a nice nutty flavor, coming from tahini, that’s what you will get today! I am excited to present the third vegan recipe in January. If you would like to know why I am doing a vegan January, please check out my previous post. In my opinion, chocolate chip cookies are the best thing in the world, they are souldfood, a simple dessert, easy to prepare, they make children happy as well as adults. Regardless if filled with caramel, plain, with brown butter, I have quite a few recipes on my blog, even including a chocolate chip cookie cake, that’s how much I love this flavor. I have been wanting to try chocolate chip cookies with tahini for a while now and finally managed to give it a try. I love the vegan version, even my husband gobbled up the cookies happily and gave his stamp of approval. These vegan cookies contain tahini, the sesame paste as a replacement for the egg. These vegan chocolate chip cookies with tahini come together within minutes and have such a nice nutty flavor.

Ingredients

  • 80 grams of coconut fat
  • 90 grams of tahini (sesame paste)
  • 65 grams of water
  • 1 teaspoon of vanilla extract or vanilla paste
  • 180 grams of brown sugar
  • 260 grams of all-purpose flour
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 180 grams of vegan chocolate chips or chocolate
  • Optional: coarse salt

Instructions

1

Melt the coconut fat, add the tahini paste, water and vanilla extract and stir until fully combined. Add the brown sugar and mix again. Then add all remaining ingredients except for the chocolate chips. Fold in 160 grams of chocolate chips. Chill for at least ten minutes or longer. I chilled mine for half an hour.

Meanwhile line a baking sheet with parchment paper and preheat the oven to 180 degrees Celsius. Using a tablespoon, roll into small balls and place on the baking sheet. Bake for about ten minutes. Whiel still warm, press remaining chocolate chips into the warm cookies and sprinkle with coarse salt if desired.
