Oatmeal Chocolate Chip Cookies

Finally the heat wave is gone, it is rainy and cold and I can turn on the oven again, yay! Finally! So I decided to give these oatmeal chocolate chip cookies another go. Cookies are the best example of “ROI”, return on investment, you have to invest very little time and money for a wonderful result, cookies have the best ROI in my opinion. This is the cookie monster speaking. Oh, and in case you were wondering, yes, I did work in HR of a consulting company for a few years, I guess their lingo did rub off a little… So are you in for these simple and delicious cookies?

I am always sad that in Germany cookies are restrained to Christmas. We even have a special word for seasonal cookies, they are called “Plätzchen”. I wish cookies were in season all year long as they are in the US. Seriously, I don’t know what is better than a cookie with some milk on some rainy day. But even in Germany you can start feeling fall coming, the nights are colder, the mornings crispier, so I felt I was entitled to making cookies even in Germany. I don’t care if Christmas is still far away, I think these cookies can already be eaten in September. Do you think the same?

Oatmeal Chocolate Chip Cookies

Serves: About 25 cookies
Prep Time: 15min Cooking Time: 10min Total Time: 25min

These oatmeal chocolate chip cookies come together quickly and only need a very short amount of chilling time.

Ingredients

  • 180 grams of butter, at room temperature
  • 130 grams of brown sugar
  • 50 grams of regular sugar
  • 2 eggs
  • 1 teaspoon of vanilla extract, see here how to make your own
  • 1 tablespoon of molasses
  • 1 teaspoon of cinnamon
  • 190 grams of all-purpose flour
  • 1 teaspoon of baking soda
  • 240 grams of rolled oats
  • 200 grams of chocolate chips

Instructions

1

Cream the butter with the sugars for a few minutes until light and fluffy, add eggs, vanilla extract and molasses and cream until combined. Add cinnamon, flour, and baking soda and only mix until combined. Lastly add the oats and chocolate chips and only mix until combined. Chill for about half an hour in the fridge as this will make it much easier to roll the cookies and also help them not to spread.

2

Preheat oven to 180 degrees Celsius and line two baking sheets with parchment paper. Take about a tablespoon for each cookie, I usually bake 12 per baking sheet. Bake for about 10 minutes or until slightly golden around the edges. You may add a few more chocolate chips to the warm cookies for nicer looks. You can easily freeze these cookies if you manage not to eat them all.

Die sind genau nach meinem Geschmack. Rezept ist zum Nachbacken reduziert und ich kann übrigens auch das ganze Jahr über Cookies essen. 😉
