Finally some cookies on the blog again. I haven’t posted a recipe for 9 (!) months, can you believe that? This is extra crazy because of course there were cookies in our house during those nine months, believe me. I find it sad that Germans tend to bake cookies only for the season, there even is a special word for these cookies, instead of Kekse you will say Plätzchen. But I ignore that, for me cookies can be eaten all year long. We had brownie cookies, my favorite chocolate chip cookies and Nutella chocolate chip cookies, recently we have had vegan pumpkin chocolate chip cookies or pumpkin cookies with cream cheese frosting.

I don’t even remember how many recipes I tried before I settled on these chocolate chip cookies, which finally were up to my standards. Try to imagine these brown butter and toffee added to this classic and then you will get these. So good! I hope you enjoy them as much as we did, they were gone in a second. In my opinion you can eat them all year round, not only during the cold months.

Brown Butter Chocolate Chip Cookies

These chocolate chip cookies are pimped with brown butter and caramel pieces

Ingredients

  • 200 grams of butter
  • 150 grams of brown sugar
  • 50 grams of regular sugar
  • 1 teaspoon of vanilla extract
  • 2 egss
  • 300 grams of all-purpose flour
  • 1 teaspoons of baking soda
  • 1 teaspoon of baking powder
  • A pinch of salt
  • 130 grams of chocolate chips
  • 100 grams of soft caramel (here in Germany e.g. Kuhbonbon, Durchbeißer, etc.), cut into chunks

Instructions

Melt half of the butter (100 grams) in a pot on medium heat for 5-10min. It should first be bubbly, then quiet down and start smelling nutty and have a brown kind of color. Let chill in the fridge for about 10 minutes or longer.

Bet the remaining 100 grams of butter for a few minutes, add the sugars and beat for 1-2 miutes. Add vanilla extract, eggs and cooled brown butter and mix until combined. Then add flour, baking soda, baking powder, and salt and only mix until combined. Fold in chocolate chip cookies and chunks of toffee. Chill for at least an hour or overnight.

Line a baking sheet with parchment paper, preheat oven to 180 degrees Celsius and roll cookies into small balls, about a tablespoon each. Place about 10 on one sheet and bake for about 10 minutes. You can press some additional chocolate chips into the warm cookies to look pretty. These cookies can be frozen beautifully.
