Today I am going to introduce you to a delicious hazelnut cookie in the shape of a squirrel. You need to know that I have tried several hazelnut cookies. I wanted to get a nice cut-out cookie, in my opinion the squirrles should have some nutty flavor, don’t you think? I have been trying since the time I got this adorable squirrel cookie cutter! So far no success, but finally, when I made this recipe, I was so happy with the result and alas, today you get this recipe as well.
Trying yet again another hazelnut cookie recipe had to do with the fact that Ellen Martens made these super cute mugs. Check them out in her online shop. She is such a talented illustrator! Since one of the mugs has a little squirrel on the front, I wanted to make some matching cookies. Yes, I had tried before and failed, but this time I thought, why not? One more shot wouldn’t hurt, would it? And when it finally worked out, I was so, so happy! Finally, yay!

This are my favorite hazelnut cookies as they are easy to roll out and keep their shape First beat the butter with the sugar until light and fluffy for a few minutes. Then beat in the egg. At the end add flour and hazelnuts until you have a heavy dough. Wrap and chill for at least half an hour or overnight. Roll out on a floured surface (don't roll out too thin) and cut out cookies as desired. Preheat oven to 180 degrees Celsius and line a baking sheet with parchment paper. While the oven is heating up, pop the cookies back to the fridge. Bake for 8-10min, depending on size of the cookie cutter. Let cool. Melt the chocolate with the oil on low heat and either cut off the corner of a small plastic bag or using a piping bag to draw lines, flood some areas of your cookie. Sprinkle with additional ground hazelnuts.My Favorite Hazelnut Cookies
