I made cute pumpkin cookies in pumpkin shape! Reason was for Pinterest apparently telling me to make pumpkin cookies, all I saw was something pumpkin. So I obeyed and thought, why not make some pumpkin sugar cookies? For this I turned to my favorite sugar cookie recipe. Because, you know, IF you make a cookie shaped like a pumpkin, it sure should contain pumpkin. At least in my opinion. And then I also wanted some fall spices, like cinnamon, cloves, ginger, and nutmeg. So I threw in this spice mix. It actually is very similar to the one of my beloved pumpkin spice latte. And in the end I got these cute little cookies.

I really don’t understand people who make very bland sugar cookies and somehow are more excited about the decoration. Really? That’s not me. So I had to try a little before I was happy. If you look real close, you will see that these pumpking cookies actually contain pumpkin. This is important to me, I wanted them to have that flavor. I also like the fact that you can freeze these cookies so beautifully. Either frosted or unfrosted. And since these are some fall cookies, I decided to add a little cinnamon to the icing, too. Because, why not?

Kürbis-Plätzchen in KürbisformUnfortunately, I didn’t have a pumpkin cookie cutter. But as always, there is a solution. Just google pumpkin cookie cutters and make one out of strong paper. Yes, I also cut out my pumpkin cookies with a knife. Yes, it was a little more work, but I find that it is OK. There is actually a store in Germany, which supplies many different cookie cutters, it is called Mein Cupcake. If you are on the lookout for a nice pumpkin cookie cutter, I would strongly recommend this one. But apart from that, don’t worry, this recipe is not that difficult, all you have to keep in mind is to chill the dough. Before cutting out cookies and after. If you do that, I am sure you will have wonderful cookies to eat!

Cute Pumpkin Cookies in Pumpkin Shape

Serves: 25 depending on size
Cooking Time: 10min preparation + chilling + 10min of baking + decorating

Ingredients

  • Pumpkin Cookies
  • 230 grams of butter at room temperature
  • 40 grams of regular sugar
  • 80 grams of brown sugar
  • 1 egg, size L
  • 40 grams of pumpkin puree
  • 1 teaspoon of cinnamon
  • 1/2 teaspoons of ground cloves
  • 1/2 teaspoons of ground ginger
  • 1/2 teaspoons of ground nutmeg
  • 350 grams of all-purpose flour

  • Icing
  • 1 egg white
  • 200 grams of icing sugar
  • 1 teaspoon of cinnamon
  • 50 grams of semi-sweet chocolate

Instructions

For the pumpkin cookies cream the soft butter with the sugars for about two minutes. Then add the egg and pumpkin and mix again. Add the spices and flour and mix until combined.

Roll out dough on a generously floured surface between two parchment papers. Be sure to roll out thick (at least half a centimeter to a centimeter) and transfer to fridge to chill for at least half an hour between the paper. Take out dough and cut out pumpkins with a cookie cutter. Roll out remains and repeat with the rest until no dough is left. Chill the cookies for another 15min before baking. It is important for the cookies to be really cool before they go into the oven.

Preheat oven to 180 degrees Celsius and bake cookies lined on a baking sheet with parchment paper for about ten minutes or until lightly golden. The cookies will not spread very much, so you can place them close side by side. Let cool.

For the icing place all ingredients in a bowl and mix with a mixer. Depending on humidity, season, etc. you may need to add more sugar or more water. The icing should be falling like a slow ribbon. Pipe icing on pumpkin cookies (see pictures) and let dry. Once dry, heat chocolate at low temperature while stirring and make additional ornaments. Let dry.

These cookies freeze really well, either frosted or unfrosted. Be sure to let come to room temperature before serving.
