Today you will get the ultimate chocolate cake with creamy chocolate mousse filling and chocolate ganache! If this is not something for dark days in November, I don’t know what is. I believe there is a reason why the most loved, baked, and clicked recipe on my site are these brownie cookies. I originally posted that recipe in November while living in Hamburg, which is known to be dark in winter. So here we come again with yet another chocolate recipe to cheer you up. I have to warn you though, this is anything but healthy. This cake contains lots of calories. But to be honest, do you expect anything less from a decadent chocolate cake? I wouldn’t! If we are going for chocolate, I strongly believe we should go for the full deal, no excuses, no “skinny”, less fat, less sugar or anything. Are you with me on this?

We do need for some seratonine hormone to be produced, to get all happy in case we get the November blues. So let’s bake this chocolate cake with moist chocolate layers, a cream mousse filling, and covered in chocolate ganache. Welcome to my chocolate heaven!

Ultimate Chocolate Cake with Chocolate Mousee and Ganache

Serves: One 20 cm/8inch ∅ springform

This ultimate chocolate cake has moist chocolate cake layers, is filled with chocolate moussse and covered in ganache.

Ingredients

  • Chocolate Cakes
  • 170 grams of semi-sweet chocolate
  • 3 eggs
  • 160 grams of neutral oil
  • 180 grams of buttermilk
  • 2 teaspoons of vanilla extract, see here how to make your own
  • 340 grams of all-purpose flour
  • 100 grams of unsweetened cocoa powder
  • 270 grams of regular sugar
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • A pinch of salt
  • 1 teaspoon of espresso powder (can be omitted)
  • 360 grams of boiling water

  • Chocolate Mousse
  • 200 grams of semi-sweet chocolate, chopped
  • 120 grams of boiling water
  • 20 grams of unsweetened cocoa powder
  • 400 grams of heavy cream
  • 30 grams of regular sugar
  • 1 teaspoon of vanilla extract, see here how to make your own

  • Chocolate Ganache
  • 200 grams of semi-sweet chocolate
  • 200 grams of heavy cream

Instructions

For the chocolate cake line the bottom of two springforms of 20cm/8inch with parchment paper, preheat oven to 180 degrees Celsius.

Melt the chocolate on low heat, set aside.

Mix together eggs, oil, buttermilk, and vanilla extract in a large bowl. Add the dry ingredients except for the water and mix slowly. Then add the boiling hot water and mix again for about a minute. Pour into prepared springforms and bake for about 35min, an inserted toothpick should come out clean.

For the chocolate mousse melt the chocolate on low heat, mix the boiling water with the cocoa powder in a small bowl, then add the slightly cooled off chocolate. Chill in the fridge.

Meanwhile beat the heavy cream with the sugar and vanilla extract until soft peaks form, then add the cooled-off chocolate mix and beat until stiff peaks form. Chill in the fridge for at least an hour or overnight for the chocolate to harden again.

Cut the cake layers in half and layer them, each time with a chocolate mousse layer in between. You should have enough mousse for the outside as well. Chill for a few hours or overnight.

For the chocolate ganache heat heavy cream until almost boiling, then take off the heat and add the chopped chocolate. Stir until properly combined. Let stand at room temperature for about 30 minutes, then it should be thick enough to frost the cake with another layer. Decorate with fresh berries and further chocolate shavings.
