Happy Holidays with these Chocolate Star Cookies!

So, how is your cookie intake? Are you already done with them for 2017? In case you didn’t know, Germans have a special name for the cookies you bake during the holidays. They are called “Plätzchen” whereas everyday cookies are “Kekse”. Does tell you something about how important cookies are during the holiday season, doesn’t it? Two words for cookies, the boring normal ones and the fancy ones for the holidays. And since I love cookies (any for that matter), the holiday season is perfect for a cookie monster like me. Welcome to the Chocolate Star Cookie. This cookie is the star of the sweet combination of vanilla and chocolate – in all its glory.

I decided to go for a cut-out cookie, which melts in your mouth and is cute at the same time. The dough is a classic sugar cookie and has vanilla as a spice. Unfortunately, vanilla has become very expensive. For that reason I have been making my own vanilla extract, you can see how how you can make some yourself in about five minutes.

And then the chcolate ganache. Because chocolate can never be wrong. Think of a super nice vanilla cookie filled with chocolate. And then you will have these cute little stars. I would say, welcome to cookie heaven. So without further ado, let me introduce the Chocolate Star Cookie to you.

Chocolate Star Cookies

Serves: 25 depending on size
Cooking Time: 20min preparation + chilling + 10min of baking + assembling

Ingredients

  • Cookies
  • 150 grams of all-purpose flour
  • 100 grams of cold butter
  • 50 gr of regular sugar
  • 2 tablespoons of vanilla extract, see here how to make your own
  • 1-3 tablespoons of cold water

  • Chocolate Ganache
  • 85 grams of semi-sweet chocolate
  • 45 milliliters of heavy cream

Instructions

For the cookies make crumbs with all ingredients except for the vanilla extract and water. This is best done with the kneading attachment of a mixer.

Add vanilla extract and water one tablespoon at a time and kneed with your hands until you can form into a ball. Chill for at least half an hour in the fridge with plastic wrap.

Meanwhile prepare the chocolate ganache. Heat the heavy cream and pour over chopped up chocolate pieces. Stir until chocolate is melted. Let cool off.

Take out dough, divide in half, put back one half in the fridge. Roll out the other half on lightly floured surface. Cut out desired shapes. Half of the cookies should have holes, the other half shouldn't. I used a smaller star shape. Once done, transfer to baking sheets lined with parchment paper. Repeat with the other half.

Bake cookies for about eight minutes at 180 degrees Celsius. They should be lightly golden.

Put some of the chocolate ganache in the middle of a cookie without hole and sandwich a cookie with hole on top. Spread ganache a little with a toothpick if need be. Let them cool.

These cookies are perfect for shipping and taste even better on day 2.
