Gingerbread Cupcakes with Cranberry Filling

Today I brought you some wonderful gingerbread cupcakes with cranberry filling. They are so easy to prepare, really! Basically you cream the butter with the sugar, add the egg, and then all other ingredients and that’s about it. Really simple, I promise.

Lebkuchen-Cupcakes mit Cranberry-FüllungThere is a reason why I called these cupcakes gingerbread cupcakes. I made the cupcakes with molasses and added a lot of gingerbread spices. I mean, you do want them to actually taste like Christmas, right? I also decided to fill them with cranberry jam, which we are going to prepare in a few minutes, it is really simple. And the frosting secretly hides some gingerbread spices in the chocolate. I hope you are as excited about these cupcakes as I am!

Sachertorte, Austria’s most famous Chocolate Cake

There hasn’t been enough chocolate on this blog yet. So Sachertorte it is! Ever heard of this delicious chocolate cake? It was invented in Austria and it has all the good stuff, lots of butter, lots of eggs (10 in total!), and chocolate, of course. Don’t bore me with cocoa, no, let’s go straight to chocolate. And with these delicious ingredients you make light and fluffy chocolate sponge cake. And to keep it all together, you use apricot jam as the glue. I just love it.

SachertorteI actually had the chance to eat it in Austria. Originally the cake comes from Vienna, I did have the chance to eat it in Vienna, but, gasp, didn’t like it that much. The one I really enjoyed a lot was in Salzburg, the town Mozart is from. Below picture was one of the first pictures I took with my current camera, the Sony Nex7. My Eight Favorite Fall Recipes

Have I mentioned before that I love fall? It is my favorite season. I just love everything, the cozy scent of cinnamon, warm and snuggly blankets, hot chocolate, the golden sunlight, there is very little I don’t like about fall. I even enjoy the rain, even if I have to wear a rain jacket and rain pants when I cycle to work and feel the raindrops hitting my face. It’s like an old friend I am happy to say hi to. For that reason it is time that I give you a list of my favorite fall recipes. Oh, there is so much you can bake with, apples, plums, cinnamon, pumpkin, I just love fall ingredients! As today is the first day of fall, I officially wanted to do a collection of fall recipes. I hope you find something to your liking!

I made a mistake the first time I made these. I gave these cute little owls names. And then it was so hard to actually bite into one of these big eyes… Really bad idea. You will need Oreos and M&Ms, it’s really simple to make.

Chocolate Layer Cake with Berries or Farewell to Summer

I believe it is time to say goodbye to summer. At least here in the north of Germany you can tell, the nights are getting chilly and the days are definitely getting shorter. For that reason I decided to celebrate the change of season with a chocolate layer cake with lots of berries. Mind you, the strawberries are not imported, but actually from Germany. But regardless of what type of berries you have at hand, I am sure you will love this cake. Just make sure you find some tart berries and you will be good to go. The sweetness of the chocolate combines nicely with the brries, believe me.

Vegan Oreo cupcakes! Yes, you read right, vegan cupcakes. You may wonder why I am posting a vegan Oreo cupcake recipe. Well, the thing is that this vegan Oreo cake is one of my most popular blog entries. If you like a layer cake, you may also like vegan Oreo cupcakes, that’s what I figured.

So I started looking for a good vegan cupcake recipe, which I found here. I added some chocolate chunks for good measure. And then I wanted to use Ermine frosting. That’s frosting prepared with a flour base to thicken the butter/margarine and make it pipable. I used the non-vegan option in these lavender cupcakes and also in order to frost a cute cookie monster on this non-vegan cookie cake. Ermine frosting is slowly becoming my favorite frosting as it is not as sweet and, as you can see here, also is great for vegan buttercream. This time I decided to use a real vanilla bean (yes, they are expensive) to get really nice vanilla flavor.

Especially if combined with caramel and sea salt. So I decided to create my own version of this coffee shop classic!
