This simple apricot cake is exactly what you need for a picnic, I took pictures outside on purpose. Sitting in a green area with a piece of this cake sounds perfect to me. The cake is easy to make and does not require any chilling times. Even though there are only two of us, we gobbled it up quickly. I was inspired by this simple cherry cake, but I would be me if I didn’t tweak the recipe a bit and made it even simpler. But let’s get back to this cake. Essentially you will press down the dough in a springform, spread the sliced apricots on top and the smear on a topping, which comes together in minutes. I promise you, it is going to be done quickly, really. I believe you will be able to put the cake into the oven in about half an hour or even less. It doesn’t take too long to cool off, and then you will eat one small piece, and maybe another, and suddenly it is gone…
This simple apricot cake contains a dough that is immediately pressed into the springform, sliced apricots and a toppings whisked together in minutes. You can see in this short video how I make the cake. Grease a 24-26cm/8-9 inch cake pan with either butter or oil, preheat oven to 180 degrees Celsius. First wash, destone and slice the apricots and set aside. Then mix the flour, baking powder, sugar and vanilla extract into a large bowl. Make a hole in the middle and crack the egg white into this hole, reserve the egg yolk in a small bowl, we will need it. Try to create some mash with the egg white and some flour. Then add the cold butter in chunks and quickly work into a ball. Press down about 2/3 of the dough into the cake pan. Roll the other third into a long string, I divided mine in half and pressed this string all around the edges to create some kind of rim (see video). Spread the tablespoon of bread crumbs on your prepared crust and then the apriocts. Add all remaining ingredients to the egg yolk and mix to a lumpy dough. Smear on the cake trying to cover the apricots. Bake for about 40-45min or until golden.Simple Apricot Cake
