Apricot Strudel

Apricot strudel, I just had to make one! Since attending an online strudel class, I have been in a strudel craze. I published one full article on how to stretch out strudel dough not long ago. This time I decided it was time for a summer strudel with a lot of apricots. I am a huge apricot fan, I have a lot of apricot recipes on my blog. Plum Cake with Yeast Dough

You probably know that it is only my hubby and me so I thought making a full baking sheet of cake would probably be too much. I already have a plum sheet cake on here. So I figured I would make more of a coffee cake in a round form. This would probably not take as long to eat. So I got to working on it and once done, it took very little and suddenly I only saw half of the cake left. Where had it gone? My hubby looked all innocent, he claimed he had only eaten three pieces of cake. If these these pieces were very large chunks of cake I inquired. Well, this depends on how you define “chunck”. Well, well, well… I think it speaks for itself that hubby was so excited about this recipe. I loosely based it on the Recipe from Alfons Schuhbeck (in German). he is very famous, especially for this plum cake called Zwetschgendatschi, so I am happy to present this plum cake with yeast dough, lots of plums, and cinnamon crumbs.

Tomato Pesto with Fresh Tomatoes

I am introducing an unusual recipe today, homemade tomato pesto, red pesto or pesto rosso made with fresh tomatoes. Reason for this being that I was gifted a lot of self grown tomatoes. Quite a variety, some big, some small, many yellow and one even purple. The many yellow tomatoes are the reason that the pesto has a slightly lighter color. But regardless of the color, man, my hubby and me devoured this pesto. First we used it as a dip for crackers, then I made a tomato tart and of course we had to have pasta with it. It was gone so quickly, I had to made fresh one. Thank God we got a large batch of tomatoes.

Triple Berry Pie

Berry pie, today it is triple berry day. How to make a pie crust I explain in this blog post. This pie is filled with at least three types of berries. I had a lot of blueberries, some raspberries, and blackberries. You may also use strawberries, or, if you want to go crazy, even cherries. This pie is another summer pie, feel free to check out my cherry pie, peach pie, strawberry pie, or these blueberry hand pies. The trick for a proper set filling is here that you cook half of the berries first with some cornstarch and then add the fresh berries for additional texture. This is so delicious, I promise.

Simple Apricot Sheet Cake

Today you will get a simple apricot sheet cake. Because I love apricots and because I needed a simple cake, one you can eat with your hands and you may take to a picnic. For that reason I took pictures outside, I wanted to feel the fresh summer air. I guarantee, this cake is going to disappear faster than you can look. We happily ate it. Peach Tart with Four Ingredients

Tarte tatin mit Aprikosen

Today I am presenting a peach tart with only four ingredients: peaches, flour, sugar, and butter. If you have these ingredients at home, feel free to get started on this beauty. This is an upsidedown cake, so you will need an ovenproof pan. However, the tarts I photographed here were all made in Spain and I didn’t have an ovenproof frying pan. This is also possible, just make the caramel separately. Think caramelized peaches that are held together by some dough and you will get this summery dessert. Serve with a dollop of whipping cream or ice cream and you’ve got summer on your plate.

Mango Swiss Roll

Today you will get a Swiss roll again. It is one of my favorite cakes, so I have a lot on my blog. However, since the last one is about a year ago, I finally thought it would be OK to introduce one again. The previous one was a strawberry Swiss roll, but this time it is with mango. The batter contains oil and milk and thus probably does not count as a traditional sponge. However, it is more elastic that way and is also easy to make for beginners.
