Meringue Roll with Lemon Curd and Fresh Strawberries (Gluten-Free)

If you like pavlova, this meringue roll with lemon curd and fresh strawberries is for you. Bonus point, this roll is completely gluten-free, it consists mainly of egg whites and sugar. Fluffy and light, airy, the feeling of a cloud, this is how this dessert tastes like. As the roll itself contains quite a bit of sugar, I decided to fill it with a tart lemon curd as a nice contrast. Fluffy Japanese Pancakes

Do you like waffles or pancakes? Then you may enjoy Japanese pancakes. They are light and airy, similar to a soufflé, but in pancake form. Japanese seem to like cloud-like food. They also have a cotton cheesecake and will not shy away from a fluffy sponge roll. You may serve these pancakes with fresh fruits, whipped cream, icing sugar, maple syrup and they will be perfect for breakfast or brunch. The only downside is that you need to serve them very fresh as the tend to deflate after a while.

Savory Pionono from Argentina and Uruguay

Pionono is a savory roll from Argentina or Uruguay and is usually served during the holidays. It is often served as finger food, individual slices are pierced with a toothpick and arranged on a platter to take from. I know that it sounds unusual to fill a sweet roll with something savory. But if you think about it, brioche is also a sweetened bread, which is used for sandwiches and the like. I first was a little hesitant, but once I got used to the idea, I really like this mix of sweet and savory. Finnish Strawberry Cake “mansikkakakku” and Why I am Celebrating

Today I decided to open strawberry season, I am celebrating with this delicious Finnish strawberry cake called “mansikkakakku” (which literally translates as strawberry cake). The cake consists of fluffy sponge cake, whipping cream and lots of strawberries, I tell you, even though it is only the two of us, we managed to eat this cake within a few days, we loved it. This is the cake version of the strawberry sponge cake. Reason for this decadent cake is simple, I am celebrating. I am celebrating to date exactly six years ago I had a horrible bike accident including brain bleeding, but I didn’t get any permanent damage from it. Tarantella de Manzana, or Argentinian Bread Pudding with Apples

Yay, today I am present a recipe from Argentina, an apple cake slash bread pudding, which is prepared similarly to “flan“.  I was fortunate enough to make this cake named “tarantella de manzana” with tart apples, the variety Südtiroler Apfel g.g.A. When the package arrived with Braeburn apples, I knew exactly what I wanted to make. But let’s get back to this dessert from Argentina. Legend has it that this cake is named after an Italian dance (tarantella) as a) Italian immigrants supposedly invented this cake in Buenos Aires and b) this cake is a bit wiggly when you take it out of the oven. You either need to dance as you are so excited for being able to eat this delicious cake, or the wiggly movement actually is similar to the movement of the dance. Regardless of its origin, this cake is so popular, you will find it basically on every menue of any restaurant in Buenos Aires.

14 Recipes with Apples

Today I am doing a recap, 14 recipes with apples. I normally don’t like to eat a plain apple just like that, but I am all in, especially in fall and winter when it comes to apple slices in porridge, somehow app by les are extra perfect for this occasion. This year we got to do apple picking already. Some farms close to Munich offer this option. We went to the Holzerhof in Ismaning (I am not paid to mention this). You can pick apples as well as plums and it is a super pleasant experience. When you get there, they will let you know which type of apple you may find where and then let you to it, so you are free to try whatever apple type you want. I took home quite a big batch and had to make a lot of things with apples. So for that reason let me give you my 14 favorite recipes with apples:
