Fifth Blog Birthday and a Raspberry Chocolate Cake

In four days on February 15th, this blog will turn five. That’s reason to celebrate! That’s why I am offering this super delicious raspberry chocolate cake. Why I am doing it four days in advance and why this is the second chocolate raspberry cake on the blog, I will let you know below.

I don’t remember distinctly why I hit “publish” on a Thursday, which was February 15th, 2017. I believe I had made this French lemon tart for Valentine’s. My hubby loves anything with citrus fruits. At the beginning of this blog I thought I wouldn’t publish anything other than cookie recipes and recipes my husband requested. It may sound stupid, but it also holds true in baking. Practice makes perfect. I baked, and baked, and baked. I would simply pick recipes I liked on the Internet. If I happened to make the recipe again, I would usually tweak it a bit. At the beginning I followed recipes as much as I could, tried to understand the basics. At some point I would start creating my own recipes. I would probably use a cake based I used in recipe X, but liked the filling of recipe Y better and would happily mix and match. In 2019 a good friend of mine asked me whether I would be willing to bake her wedding cake with 100 guests. I agreed as I believed to have one full year to practice. Due to COVID one year turned into two, so I practiced layer cake after layer cake. There is a reason that I published some many cake recipes in 2020 and 2021. Many of those were trial runs for the wedding cake. Among these was my first chocolate raspberry cake. Very soon I learned that this was super popular. You guys made that recipe your number 2 in 2020 as well as 2021, I just checked. I am so happy every time somebody bakes it again.

Fluffy Raspberry Sponge Roll

My husband asked for a raspberry sponge roll for his birthday. Since I love sponge rolls, his wish was my command. Simple as that. I honestly have no idea why sponge rolls seem to be very much out of fashion. They are super quick to make and usually are gone with in seconds. Everybody seems to enjoy them. What did you say? Sourdough in brownies? Seriously??? Yes, this was my reaction as soon as I saw a recipe calling for sourdough in brownies on the Internet. Why do you need to add sourdough to brownies, that sounds so strange! I have been pondering that ever since and it is slowly making more sense. If you think about it, sourdough is basically fermented flour, which is much easier to digest than regular flour. IDuring Corona times it looks like everybody was making bread and I had heard of people lamenting the fact that they had to discard so much sourdough, so why not use instead? After a while I was sold and thought, if the sourdough is a little old and may smell just a little like alcohol, even better, I definitely wanted to give these brownies a try!

Fruity Raspberry Sponge Roll (with Video)

This is a fairy dream come true. I made this fruity raspberry sponge roll the first time for our ten-year anniversary. Sooo good. This is a light and fluffy sponge base, filled with lots of raspberries and whipping cream infused with raspberry jam. This recipe is so delicious, I felt like filming it. So far there is only one more recipe video on my blog, if you would like to check out my brownie cookies, it has been the most popular recipe for a long time now. But let’s get back to this fruity raspberry sponge roll. I love sponge rolls because they only need between 8-9 minutes to bake. I find them perfect if you have company coming over. If you are a seasoned baker, you will be able to present a super delicious sponge roll in no time.

Vegan Chocolate Raspberry Cake

I have to admit, I am not that much into vegan cakes, but with this vegan chocolate raspberry cake I may be converted. I honestly can’t say whether I prefer this one to the non-vegan version. It all starts with a moist chocolate layer cake. I love the fact that you basically have to throw the ingredients together, whisk them and that’s about it. The raspberry filling is also the perfect companion for the chocolate. And don’t get me started on the frosting. It only contains two ingredients: chocolate and coconut cream, yum! And don’t worry, the coconut flavor is very subtle, I don’t really like coconut and I had a hard time tasting it, so I am sure you will be fine.

Did anyone say you can’t bake cookies in summer? Ha, I would like to disagree with that statement, these raspberry chocolate cookies are prefect for summer. Raspberries, seriously, fresh raspberries scream summer all over. So here you go. I love raspberries with chocolate, in my opinion one of the best flavor combinations. If you don’t want to bake this, go ahead and look for something else, but I am in love with these chocolate raspberry cookies!

Himbeergugelhupf mit Hefeteig

Es ist eine Schande, dass es so lange schon keinen Gugelhupf hier gab. Ganz ehrlich, das geht nicht! Und als ich meine geliebte Gugelhupfform beim Umzug in der Hand hielt, dachte ich: Himbeergugelhupf, ich muss einen Himbeergugelhupf machen! Gesagt, getan, also gab es zu einem Sonntagskaffee diesen super saftigen und leckeren Gugelhupf. Man braucht ein wenig Geduld, weil es ein Hefegugelhupf ist, aber das Tolle ist, dass man nicht sehr viel vorbereiten braucht, das macht die Hefe sozusagen ganz von allein.

HimbeergugelhupfViele haben ja Angst vor Hefe, aber wenn man es ihr kuschelig warm macht, also so wintermäßig mit Kuscheldecke, nicht heiß, sondern schön warm, wie eine verfrorene Frau es mag, dann funktioniert es eigentlich immer. Wirklich. Wenn man Frischhefe benutzt, sollte man sicher sein, dass sie wirklich frisch ist, aber Trockenhefe macht genauso gut, versprochen.

Und wenn man den Teig einmal zubereitet hat, dann kocht man Himbeeren mit ein paar Zutaten auf und beschmiert das ausgerollte Teigrechteck damit. Dann aufrollen und vorsichtig in die Gugelhupfform packen und dann ab in den Ofen nach einem kurzen zweiten Gehen.

Chocolate Layer Cake with Berries or Farewell to Summer

I believe it is time to say goodbye to summer. At least here in the north of Germany you can tell, the nights are getting chilly and the days are definitely getting shorter. For that reason I decided to celebrate the change of season with a chocolate layer cake with lots of berries. Mind you, the strawberries are not imported, but actually from Germany. But regardless of what type of berries you have at hand, I am sure you will love this cake. Just make sure you find some tart berries and you will be good to go. The sweetness of the chocolate combines nicely with the brries, believe me.
